Patrice Sauquillo joined Compass Group in 1998. He started as a Chef de Cuisine and has evolved with the
company over the last 18 years to become the Executive Chef at Evergreen Campus, which serves 4'000 meals
a day across five outlets. Patrice lives and breathes cuisine and gastronomy. When he's not overseeing
kitchen operations and service, he teaches a monthly cooking course to Credit Agricole employees—what he
calls a truly convivial moment in his busy schedule.
A typical day for Patrice includes a morning briefing with his production chefs, overseeing service preparation, and greeting his clients to discuss the day's offerings. In the afternoon he carries out the ordering and scheduling, and ensures that the restaurant and kitchen have been properly closed.
For Patrice, the most rewarding part of his job is the daily challenge of keeping things fresh and new for his demanding clientele. He feels that Compass Group has allowed him to truly fulfill his career, and he enjoys the interpersonal relationships he holds with both his team and his clients.
