About the job

Responsibilities and duties for this position shall include, but not be limited to, the following areas and activities. At management discretion, direction may be given for tasks outside the scope of work described.

  • Assists Executive Pastry Chef in all aspects of the management of the pastry/bakery operation when requested
  • Proposes bakery recipes for the entire resort to the Executive Pastry Chef, in accordance with the principles of the Culinary Spirit of Constance Hotels Experience, the concepts of the restaurants and the yearly action plan.
  • Ensures that all bakery production served in the resort respects hotel standards, in terms of quality, taste, portioning, presentation and variety.
  • Ensures that all food entrusted to bakery served at hotel respects at all times the hygiene standards in force in the resort. Inspects areas daily and ensures that standards of cleanliness and order of areas are respected
  • Ensures that quantities and timing for all bakery productions are respected at all time.
  • Anticipates needs in terms of products, material and human resources. Suggests initiatives to the Executive Pastry Chef.
  • Ensures that bread supplies are sufficient and of a quality related to hotel standards in all outlets, including buffets. Ensures that bakery buffets are replenished and always attractive.
  • Ensures optimization of products and preparations produced in bakery.
  • Supervises the production of recipes and costing for all bakery dishes and preparations served in the resort are accurate and updated.
  • Ensures that wastage is limited to the minimum and that levels of productions are suitable with the needs of the operation.
  • Monitor closely the motivation and productivity of the bakery team members. Suggest initiatives to improve stability and motivation of the team.
  • Supervises all the technical training related to bakery.  Assists Executive Pastry Chef in producing all relevant documents related to training matters.
  • Ensures that all team members follow kitchen P&Ps and SOPs and respect hotel procedures.
  • Ensures that team members behave as per the principle our core values.
  • Ensures that the bakery is complying with the safety and security rules of the resort and the country. Ensures that all bakery team members are fully aware of fire safety procedures and evacuation routes.
  • Ensures that all ovens and pastry machines are used according to procedure and are handled with maximum safety and security
  • Ensures that objectives are met in terms of score at hygiene inspections for bakery, and that HACCP standards are followed with consistency
  • Fully collaborates with the baker trainer, research and development to define and improve all bread production in the resort

JOB REQUIREMENTS

Experience

  • A minimum of  2 years’ experience in the hospitality industry on a similar position
  • Experience working in top of the range large luxury resorts of over 180 rooms with refined services for the discerning and demanding traveler.
  • A previous international exposure will be an advantage

Qualifications

  • SC holder OR equivalent
  • NC3 – Food Production OR equivalent

Language

  • Fluent in English and French, both verbal and written
