JOB SUMMARY:

 

The Pastry Chef is responsible to manage the daily operations by providing professional leadership and direction to pastry team members.

 

He/she is also responsible to manage and to coordinate pastry team members in preparing pastries.

 

DUTIES AND RESPONSIBILITIES:

 

Responsibilities and duties for this position shall include, but not be limited to, the following areas and activities. At management discretion, direction may be given for tasks out side the scope of work described.

 

  • Participates in cold food production.
  • Presents cold food at all events in a cost effective and safe manner.
  • Responsible for production of cold food for events.
  • Assists in the creation and makes recommendations for menu changes. Ensures compliance with health, safety and sanitation standards.
  • Trains and supervises staff.
  • Check the available food supply, including cuts of meat, sauces, par-cooked items, spices, vegetables and other condiments needed by the chef to ensure an adequate supply for the shift.
  • Set up the cooking station by obtaining all necessary equipment and materials.
  • Prepare and plate all items in a timely and accurate manner.
  • Follow all standard sanitation and health department guidelines; including food handling and wearing gloves.
  • Main a safe, organized and sanitary work area.
  • Breakdown the station, label and store food in accordance with departmental procedures.
  • Turn off equipment and ensure no safety hazard is present.
  • Notify management of unsafe conditions, needed maintenance of equipment and any accidents.
  • Follow all procedures when responding to any hotel emergency or safety situation.

HOURS OF WORK

 

The working schedules are those normally associated with the position and level of responsibility. Due to the nature of work in the hospitality industry, the Chef Garde Manger will be required to perform odd hours, work on week-ends, public holidays and during cyclonic weather. Consequently no claims for overtime, extra payment or compensation in any form will be entertained.
