Job Description

To increase guest satisfaction by providing efficient, prompt, trouble free and courteous food
and beverage service in line with departmental and hotel guidelines and the DoubleTree by
Hilton guidelines and service concepts.

Key Accountabilities – what are the responsibilities of the role?
BAR / LOUNGE
Prepares service areas ready for operation
Maintain stock’s levels
Carries out correct opening and closing procedures with particular regards to money
and charge dockets
Serves guests as requested at either the counter or at their table
Maintains the cleanliness of the area of operation
Adhere to the Licensing Laws
Assist colleagues in other food and beverage service areas
Serves orders for food and beverage to guests in their operation’s areas to the
standards as laid down in the Standard of Procedure Manual
Is knowledgeable regarding food & beverage items available to guests
Ensures correct room posting, checking key cards where needed
ROOM SERVICE
Prepares service areas for operation
Carries out correct opening and closing procedures with particular regard to money
and charge dockets
Serves orders for food and beverage to guests in their rooms to the standards as laid
down in the Standard of Procedure Manual
Maintains the cleanliness of the area of operation
Removes all trays used during room service and regularly checks the floors
Assists colleagues in other food and beverage service areas
RESTAURANT
Provides efficient, prompt, trouble free and courteous service by bussing, serving and
setting tables
Ensures buffet is kept clean and stocked with fresh food at all times
Accurately records, pre-checks and picks up all food and beverage orders
Serves guests their food and beverage promptly and courteously
Sets tables as needed prior to guest arrival
Ensures that the working area and station are stocked with “mise-en-place” and kept
clean and tidy at all times
Ensures the smooth running of the assigned station at all times
Maintains a thorough working knowledge of food and beverage menus, to be able to advise guests on selection and promote additional sales accordingly
Promotes additional sales by taking opportunities to up-sell, in a manner that is professional and courteous
Makes clear orders to kitchen using micros
Serves orders for food and beverage to guests in the restaurant to the standards as laid down in the Standard of Procedure Manual

Follows all applicable laws
Monitors and ensures highest levels of guest satisfaction by providing quality guest services and products within corporate standards
MISCELLANEOUS
Towards role
Stays abreast of current and new industry technology relating to function
Performs required duties and responsibilities in a timely and efficient manner to achieve the overall objective of the position
Is well updated on, and possesses solid knowledge of the following: - Hotel fire, bomb and emergency procedures - Hotel health and safety policies and procedures - Hotel facilities and nearby sights of interest and importance (i.e. hospitals, stations, tourist sights) - Hotel standards of operation and departmental procedures - Current licensing relating to own department and the hotel - Accepted methods of payment by the hotel - Short and long term hotel, as well as corporate marketing and promotional programs - Corporate clients and clients generating high business volume
Towards the guest
Greets and smiles at guests and customers when coming across them on the hotel grounds
Refers guests to Food and Beverage Supervisor regarding requests for information about the hotel and its surroundings that they are unable to deal with
Towards colleagues
Assists colleagues to perform similar or related jobs when necessary
To ensure accurate and timely communication with other departments
Towards self
Comply with hotel rules and regulations contained in the employee handbook
Comply with company grooming and uniform standards
Comply with timekeeping and attendance policies
Actively participate in training and development programs and maximise opportunities for self- development
Maintains own working area, materials and company property clean, tidy and in good shape; reports defective materials and equipment to appropriate individual
Continuously seeks to endeavour and improve the department’s efficient operation,
and knowledge of own job function
To report for duty punctually, wearing clean and pressed uniform, with name badge as per company standard
Towards Management

To carry out any reasonable request by the Management Team
Assists the Food and Beverage Supervisor when requested
Attends meetings and training as required by the Food & Beverage Supervisor
Accepts flexible work schedule necessary for uninterrupted service to hotel guests

Health and Safety & Environment – what are the responsibilities of the role?
Complies with H&S policy of the hotel (issued on induction and available from HR if required)
Maintains high confidentiality
Reports any suspicious behaviour of employees to the Manager and Security
Ensures that all potential and real hazards are reported and reduced immediately
Fully understands the hotel’s fire, emergency, and bomb procedures
Ensures that emergency procedures are practised and enforced to provide for the security and safety of guests and colleagues
Works and ensures that employees work in a safe manner that does not harm or injure self or others

Ensures the safety of the people and property within the premises by applying hotel regulations, adhering to existing laws and regulations
Anticipates possible and probable hazards and conditions and either corrects them takes action to prevent them from happening or reports them to a supervisor
Ensures that the highest standards of personal hygiene, dress, uniform, appearance, body language and conduct is maintained
Stimulates and encourages a general awareness of health and safety in tasks and activities carried out within the department
Security
Ensures that cash is secure at all times
Ensures all discrepancies in the cash are declared to the Head of department
Maintains high confidentiality in regards to guest privacy
Notifies the Head Housekeeper regarding lost and found objects
Supports a safe hotel by applying hotel regulations and adhering to existing laws and regulations
Takes responsibilities for keys issue and reports immediately the loss of master or other keys
Responsible Business
Show involvement and be interested in environmental and/or social issues by participating in Responsible Business hotel and departmental activities
Adopts work methods that actively promote a responsible business culture e.g. turning off lights when not in use / turning off taps & recycling where ever possible.
