Hotel Overview:  Fairmont Sanur Beach Bali is a world-class all-suite-and-villa resort set amidst four hectares of lush tropical gardens. Only 25 minutes from the Ngurah Rai International Airport, the property is located along 200m of golden beach in the Sanur district in southeast Bali. Once a fishing village, Sanur is today full of historical charm and a hub for Balinese art, culture and tradition well away from the hustle and bustle of the rest of the island.
Summary of Responsibilities:
Reporting to the Restaurant Manager, responsibilities and essential job functions include but are not limited to the following:             
  • Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
  • Maintain complete knowledge of Micros and manual systems.
  • Complete opening duties as assigned
  • Ensure correct silverware is placed for each course in a timely manner
  • Direct guest to restrooms an outlined with Regent Bali standards
  • Check and replenish beverages
  • Retrieve food orders from kitchen and serve to guests
  • Open and serve wine / champagne bottles
  • Prepare and serve coffee drinks and tea
  • Anticipate guest’s needs, respond promptly and acknowledge guests even when busy with a SMILE
  • Maintain positive guest relations at all times.
  • Be familiar with all hotel services/features and local attractions/ activities to respond to guest inquiries accurately
  • Handle guest complaints following the instant pacification procedures and ensuring guest satisfaction
  • Monitor and maintain cleanliness, sanitation and organization ofassigned station and service areas
  • Adhere to all payment, cash handling and credit policies/procedures
  • Collect and report tips at the end of the assigned shift
  • Complete closing side duties
  • Complete all closing reports as assigned, communication book and leave duty after reporting to Manager/Supervisor
  • Complete outlet log book with complete revenue and other information
  • Engage with the guest, get their comments and guest preferences and create wow Story for their stay
  • Encourage service staff to create wow story, get the guest comment and guest preference and collect it on weekly basis
  • Make sure lot of product of food and beverage promotion are created and encourage the team to promote and up-sell products
  • Prepare weekly scheduled as assigned
  • Relieve bartender when assigned
  • Assist the Restaurant Manager/Assistant as assigned
  • Stock restaurant supplies
  • Attend designated meetings, menu and wine tasting
  • Attend monthly departmental meeting
  • Conduct scheduled function room inspections, using a checklist in accordance with departmental standards
  • In addition, other duties as may be required as directed by your Manager


  • Previous Food and Beverage leadership experience preferred
  • Previous Point of Sale system experience required
  • Computer literate in Microsoft Window applications required
  • University/College degree in a related discipline preferred
  • Excellent communication and organizational skills
  • Strong interpersonal and problem solving abilities
  • Highly responsible & reliable
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs, remaining calm and courteous at all times
