Summary of Responsibilities:
Reporting to the General Manager, ARC Restaurant & Bar, responsibilities and essential job functions include but are not limited to the following:             
 

Strategic

  • Assist in positioning ARC Restaurant & Bar as a leading dining destination

  • Support the Restaurant GM in driving revenues and profit through the development and implementation of strategies, practices and promotions, while maintaining the integrity of the overall concept

  • Manage social media accounts and online reputation of the restaurant in accordance with marketing standards (i.e. Facebook, Instagram, Twitter and Revinate System, and Trust You)

  • Actively participate in the Fairmont Sustainability Program, Planet 21 and determine department specific action items

  • Support the Restaurant GM in driving  the restaurant budgeting and forecasting process while adhering to the budgetary guidelines established for the outlet (labor productivity, revenue and expenses)

  • Provide leadership and participate in relevant community events

 

Operational

  • Work closely with the Restaurant GM and the Restaurant Executive Chef to execute a  well organized and flawless operation for both the Front and Heart of House

  • Manage beverage inventory and ensure cost controls are in place

  • Address guest complaints and ensure appropriate internal follow up

  • Motivate, lead, coach, train and monitor the performance levels of all team members

  • Demonstrate a talent based approach to recruitment, including creating, evaluating and executing effective recruitment and retention strategies for the department

  • Support the In Room Dining operation in absence of the Department Head

  • Direct and maintain the safety and sanitation of both front and heart of house restaurant operations as per provincial health regulations and Ecosure standards

  • Other duties as assigned

  

Qualifications:
  • Minimum of 3 years’ management experience as a Restaurant, Lounge or Bar Manager
  • Demonstrated passion for the Food & Beverage industry and someone who uses their knowledge of current trends in the workplace
  • Demonstrated ability to drive revenues and profit, without compromising colleague and guest experience
  • Proven ability in menu design, offerings, effective marketing plans, and on-line reputation management
  • Product knowledge, including working knowledge of wines, liqueurs and other beverages.  Sommelier designation is an asset
  • Thorough working knowledge of financial reporting structures (budgets, labor, productivity, revenue and expenses)
  • Demonstrated strong relationship skills with all constituents
  • Ability to work a flexible schedule that meets business demands, including evenings, weekends and holidays
  • Ability to work effectively with programs including Microsoft Office, Open Table – Guest Centre, Avero Slingshot, Opera, Micros/Silverware, and Revinate
  • Previous experience in a luxury hotel restaurant is an asset
  • Excellent communication and organizational skills
  • Entrepreneurial mindset with strong interpersonal and problem solving abilities
  • Ability to work well under pressure in a fast paced environment
