Position of Extra Commis de cuisine

• The work can be different depending on the party to whom it is assigned:
o Wash and cut vegetables or fruits
o Cook soups, vegetables, pastries, fish and meat ordinary

Préparer les mets ou commandes qui lui sont confiés par ses supérieurs en veillant sur une garniture et présentation attractives et fraîches, une consistance, succulence et températures appropriées

Son travail peut être différent selon la partie à laquelle il est affecté :

* Préparer les pâtisseries et crèmes ordinaires, tartelettes, etc…

* Assister le Chef de Partie et le Demi chef de Partie dans la préparation et le service de tous les plats froids ou chauds, sauces, soupes, canapés, sandwichs et autres préparations selon les indications du Chef de Partie de la section à laquelle il est affecté

• Récupérer les commandes culinaires et effectuer la mise en place des denrées et du matériel de travail en suivant les indications de son Chef de Partie ou du Demi Chef de Partie.

• Minimiser les pertes de sa section et veiller sur une bonne utilisation des matières premières

• Être responsable du maintien de sa zone de travail et matériel dans de parfaites conditions d’hygiène et de propreté et toujours bien rangés y compris les chambres froides et congélateurs conformément aux standards de la Compagnie et à la législation locale.

• Respecter la procédure de l’hôtel en cas d’alarme incendie ou d’évacuation, le règlement intérieur et les standards

• Participer aux programmes de formation « on the job » et sur les standards auxquels il sera appelé à assister

• Participer au programme d’économie d’énergie en vigueur

• Respecte les programmes préventifs afin d’éviter les accidents de travail
