The role of the Assistant Executive Pastry Chef

BASIC PURPOSE:   The Assistant Executive Pastry Chef works with the Executive Pastry Chef to provide desserts, sweets, wedding cakes and breads at the resort. This department services 5 outlets and banquets which requires effective and efficient communication between all staff. Responsibilities include menu and recipe creation, banquet event execution, participating in tastings, ensuring a consistent product, quality control, food costs, labor control, daily operation organization and developing and training a solid culinary team.

Must demonstrate high standards of professionalism and have a passion for providing a unique and delicious culinary experience for the guests.

Previous pastry supervisory experience is required. Must have a portfolio of creative and inspired desserts. Experience with a remote location or Caribbean resort is beneficial. Culinary training or degree or equivalent experience required.
