Four Seasons Hotel and Residences Kuala Lumpur is located in the thriving business and financial district Golden Triangle neighbourhood. The Hotel is part of a 65-storey mixed-use tower that will include 242 Four Seasons Private Residences, 27 serviced apartments, a 209-key Four Seasons Hotel and a six- floor of 250,000 square foot luxury retail podium, collectively known as Four Seasons Place Kuala Lumpur.
The latest addition to the city’s dramatic skyline and a vibrant hub for both business and leisure travellers, Four Seasons Hotel Kuala Lumpur is conveniently located in close proximity to the city’s major attractions, including the Petronas Twin Towers and the Kuala Lumpur City Centre (KLCC). Executive Sous Chef

The Four Seasons Hotel Kuala Lumpur is looking for an Executive Sous Chef. Candidates with passion for excellence, expertise in hospitality operations and proven leadership experience are invited to apply for a career with Four Seasons. As the member of the Kitchen, the Executive Sous Chef,  works across disciplines to deliver an exceptional experience and provide leadership.

Reporting to the Executive Chef, your main responsibilities will include:

Plan, organize, control and direct the work of employees in the Kitchen Departments while ensuring superior quality and consistency in preparation of all food items

Coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen Department through effective management and leadership to ensure that established cultural and core standards are met; long-range strategic operational planning.

Assist in the planning and development of menus for the hotel, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration. 

Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.

Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen. 

Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality. 

Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments. 

Candidates must have a firm knowledge of the local market and speak Bahasa Malaysia as well as being fluent in English. Must have the right to work in Malaysia.
