The Role of the Executive Sous Chef

The Executive Sous Chef plans, organizes, controls and directs the work of employees in the Banquet kitchen and Stewarding departments while ensuring superior quality, creativity and consistency in preparation of all food items.

The Executive Sous Chef assists in the planning and development of the banquet menus ensuring the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration. The Executive Sous Chef controls labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control, ensures that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen and maintains control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality. 

The Executive Sous Chef manages the Banquet Culinary, Stewarding and Employee Dining Room teams and  communicates with employees and managers to ensure operational needs are met as well as attends regular operational meetings to ensure effective coordination and cooperation between departments. 

The qualified candidate has three to five years previous experience in culinary food and beverage management positions in a luxury hotel.  The qualified candidate has a college degree preferably specializing in hotel/restaurant management or culinary arts, or equivalent experience. Excellent communication and leadership skills, ability to work irregular hours, weekends and evenings and computer literacy in all Microsoft applications are requirements for this position.
