An Assistant Pantry Cook is responsible for preparing salads, fruits, dressings, cold meats, fish items, canapés, cold hors d''oeuvres, appetizers and other cold dishes according to Hilton''s high standards of quality.
What will I be doing?
An Assistant Pantry Cook is responsible for preparing salads, fruits, dressings, cold meats, fish items, canapés, cold hors d''oeuvres, appetizers and other cold dishes according to Hilton''s high standards of quality. Specifically, you would be responsible for performing the following tasks to the highest standards:
- Prepares all pantry food items according to standard pantry recipes or, as otherwise specified by supervisor, to ensure consistency of product to the guest; requires lifting and transportation of heavy food products weighing up to 50 lbs. and with wheeled assistance up to 200 lbs.
- Checks and controls the proper storage of product, especially on all fresh produce, checking on portion control, to maintain quality product.
- Visually inspects, selects and uses only the freshest fruits, vegetables, meats and other food products of the highest standard in the preparation of all menu items. Reads and employs math skills for following recipes. Prepares requisition for supplies and food items for production in work station.
- Keeps all refrigeration, storage, and working areas in clean, working condition in order to comply with Health Department regulations.
- Ensures that all equipment in working areas is clean and improper working condition to comply with Health Department regulations.
- Prepares items for assigned restaurant stations according to preset recipes and presentation standards, working independently.
What are we looking for?
Any combination of education, training or experience that provides the required knowledge, skills and abilities. High school diploma preferred. Culinary or Apprenticeship program preferred.
Cold food preparation experience preferred.
LICENSES OR CERTIFICATES
Ability to obtain Tuberculosis Clearance Certificate. Hepatitis A immunization or vaccination certificate required. CPR certification and/or First Aid training preferred.
All team members must maintain a neat, clean and well-groomed appearance (specific standards available).
Ability to speak another language in addition to English is preferred, with Japanese being the most desirable.
Standing, bending, stooping, and lifting weights up to and including 20 lbs. may be required. The hospitality business functions seven (7) days a week, twenty-four hours a day. In addition, this is a hospitality business and a hospitable service atmosphere must be projected at all times.
SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY
The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation.
- Good working knowledge of the fundamentals of cold food preparation.
- Good working knowledge of accepted standards of sanitation.
- Knowledge of operating all kitchen equipment, i.e. knives, blenders, buffalo choppers, mixers, grinders, food processors, etc.
- Extensive experience with slicers, mixers, grinders, food processors, etc.
- Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
- Ability to read write and speak the English language in order to read recipes and communicate with other employees.
- Sufficient manual dexterity of hand in order to use all kitchen equipment, i.e., knives, spoons, spatulas, tongs, slicers, etc.
- Ability to grasp, lift, carry or transport goods weighting a maximum of 200 lbs. with wheeled assistance.
- Ability to grasp, lift, carry or transport goods weighing a maximum of 50 lbs.
- Ability to stand and work continuously in confined spaces.
- Ability to perform duties within extreme temperature ranges.
- Ability to lift, bend, stoop, walk, push/pull heavy equipment and stand for extended periods of time.
