As Bars Manager, you are expected to know your profession and deliver it in style. Your primary role is to act as a coach, mentor and leader for both Bars teams, and to drive revenue and profit through marketing initiatives and control procedures, in run in accordance with Hilton policies and objectives.

You will also ensure the Bars meet all customer service, financial and proposed goals in an efficient and controlled manner with a strong emphasis on brand standards, outlet profitability, payroll cost controls, training and leadership of the team.

Duties/responsibilities

  • Oversee Zeta Bar and Marble Bar(being present during key periods) ensuring all guests receive their requirements in a timely manner, according to Hilton Brand Standards
  • Responsible for the rostering including forecasting, payroll control and analysis of results through Kronos and other management tools.
  • Liaise with the F&B Director to ensure all ordering and management of beverage stock for Zeta Bar and Marble is on time and that adequate par levels exist at all times.
  • Conduct regular meetings with Entertainment/Promotion Agencies to coordinate entertainment and Saturday’s “Embassy” Club nights
  • Recruit new team members as required
  • Oversee the performance of all team members and assist with the training of new and existing team members to develop the team as a whole as well as creating a relaxed, friendly and fun environment that can be called home
  • Ensure team engagement /spirit is high at all times and investigate / resolve any issues causing unrest
  • Develop menus in conjunction with the Food & Beverage Manager and Executive Chef
  • Create and serve a range of beverages with a focus on modern and creative cocktails

Skills/experience

  • Completed tertiary qualifications in Hospitality Management is desirable
  • Previous Managerial experience within a five star bar environment
  • Must hold NSW Responsible Service of Alcohol Card
  • Mixologist background with the ability to develop menus
  • The ability to lead a team and manage performance issues as required
  • Flexibility in hours as you will be working rostered shifts, especially on weekends
  • Exceptional personal presentation and communication skills
  • Flexibility to respond quickly and positively to a range of work situations
  • Passion for delivering exceptional levels of guest service
