About the job

We are recruiting on behalf of a luxury international resort located in Seychelles for a F&B Manager with previous experience in luxury hotels and managing operational teams.

Serving as the F&B Manager the suitable candidate will report directly to the GM, management and daily operations of the different outlets: 2 existing restaurants, 2 bars, Room Service and Conference & Events.

The F&B Manager will be responsible for all managing operations while delivering an excellent guest experience. Managing a team of 40 persons in F&B.

The suitable candidate will be able to forecast, plan and manage all F&B orders, staff and finance with the goal to maximize sales and revenue through customer satisfaction and employee engagement.

Main responsibilities can be split in:
Finance
• Set periodical business plan, budget and forecast and performance reports
• Analyse reports and check irregularities
• Revenue updates, operational challenges and ways to improve
• Maintain current prices and approved purveyors listed based on quality, service and cost of all related food and beverage items for requisitioning purposes, store inventories, cost control procedures and forecasts
• Maintain well balanced labor costs and payroll

Policies & Procedures:

• Coordinate the selection, purchasing, storage, inventorying, maintenance and usage of all related food and beverage supplies and equipment
• Conduct random checks to ensure that all standards are being consistently followed in
• Ensure the implementation of HACCP policies and procedures are consistently followed throughout the F&B Division.
• Coordinate the development, interpretation and implementation of hotel policies, operating procedures, training programs, manuals, directives, menus, work schedules, regulation for the F&B department
• Conduct random checks to ensure that all standards are being confidently followed


Guests/ Customer service:

• Handle all guest complaints in the food and beverage area and is charge of obtaining maximum results in the utilization and appearance of the food and beverage areas, the quality levels, performance and standards of service and develops new techniques of service towards maximum guest satisfaction at minimum operating costs
• Consistently offer professional, friendly and engaging service and make sure all F&B team follow the same level of service
• A good understanding of the luxury guests segment (especially leisure)


Management/Team work :

• Recruit, train and motivate F&B and kitchen staff
• Ability to develop and maintain effective communications between all operating departments
• Conduct daily F&B Meeting to discuss VIP guests in house & arrival, F&B revenue updates, operational challenges and ways to improve
• Promote a cooperative and harmonious working climate which will be conducive to maximum employee morale, productivity and efficiency/effectiveness
• Train and develop the F&B management team to be ready to take the next challenge

About you

• Previous hotel experience in a luxury resort is a plus
• Strong interpersonal skills and attention to detail
• Self-discipline, initiative, and leadership ability
• Ability to motivate employees to work as a team to ensure that food and service meet appropriate standards: excellent leader and trainer
• Creative, effective leader and team player, possessing a high degree of professionalism, sound human resources management capabilities, business acumen, energy and determination
• Must be able to handle the pressures simultaneously coordinating a wide range of activities and recommend appropriate solutions to restaurant problems
• Proven organizational skills, able to set and meet deadlines with quality results
• Detailed F&B knowledge, including wine and spirits
• The ability to constantly monitor the colleagues' appearance, attitude and degree of professionalism to insure their strict adherence to the Hotel standards of quality service
