Your day to day
We currently offer an exciting career opportunity for a Sous Chef for our Pan-Asian restaurant Cho Gao Marina Walk. Under the supervision of the Executive Chef/ Executive Sous Chef, the successful candidate will be responsible to manage the restaurant's kitchen operations achieving business objectives through customer focused service delivery. Co-ordinate the preparation of the menus and annual budget and work to achieve the budget by monitoring and controlling the departmental operations, considering revenue and expenditure. Effectively manage staffing costs by preparing efficient work schedules in line with legal requirements. Demonstrate service attributes in accordance with industry expectations and company standards. Monitors effectiveness of workflow and sequence of service during service periods and provides hands-on support as and when required. Determines the necessary competence for colleagues and provide training or other actions to satisfy these needs. Provides constant coaching, counselling and discipline to colleagues to ensure their capability to meet the needs of the customer and the organisation. Ensures manning and competence level of selected colleagues is sufficient for the department to meet the needs of the organisation and customer.
What we need from you
The ideal candidate will have previous experience with managing PanAsian cuisine kitchens or other similar senior roles within hospitality industry, with a recognized hotel diploma. A detailed knowledge of Asian cooking techniques and skills, including sushi, robata, wok, ramen and noodles and skills are essential for this role as well as a proven track record in launching new concepts and promotions, elevating guest experiences, leading, training and developing the team and cost management. It is also essential that you have a good command of English language (verbal and written). You will have experience in delivering a high level of food quality in a hotel or restaurant environment and preferably will have worked with food safety systems such as HACCP.
