Descriptions

 

The Sous Chef will report to Executive Sous Chef/Chef De Cuisine.

 

The candidate Must be mature, passionate, committed, flexible and a team player

To perform and delegate tasks to a multicultural team and to ensure superior production and presentation. To work in any section of the kitchen when necessary, due to business pressure or employee shortage

 

Carries out assignments as delegated by the Executive Chef, ensuring that all company and Hotel policies and procedures and minimum standards are adhered to, Assists in establishing standards of performance and job descriptions of service staff, Assists in the co-ordination of special promotions and provides administrative support necessary

 

Main Duties

•   Ability to handle multiple tasks as well busy operation & volume production with an eye to detail and presentation

•   To stay up to date with latest culinary trends and to implement creative ideas to create a better and more consistent output

•   To handle of the fully implemented HACCP guidelines as well as general health & safety in the workplace

•   To create, in conjunction with the Chef De Cuisine/Executive Sous Chef, menus, buffets  and “specials” which meet the needs of the target market and are in line with the operating concept for the restaurant

•   To maintain good working relationships with colleagues and all other departments

•   To assume responsibility for increasing departmental sales and profits

•   To minimize payroll costs by maximizing the productivity and efficient scheduling of employees.


Qualifications

 

Essential:

•      Indonesia National Citizen

•      Great people management required.

•      Strong leadership and organizational skills with a “hands on approach”

•      Bring a Strong computer knowledge such as  MS Word,  MS Excel, MS Power Point, MS Outlook and able to work with a hotel ordering system

•      Fit & Healthy

•      Good communication and presentation skills

•      English language

•      Recognised culinary diploma is mandatory and essential

 

Desirable:

•       International exposure is beneficial

•       Able to lead a team

•       Self-motivated and passionate  about his job

•       Willingness to pass on knowledge to the entire team.

 

Experiences

 

•       Minimum of 8 years in the culinary profession with a minimum of 3 years  in management position

•       Able to handle Multiple tasks as well as busy banqueting & volume operation

•       Good knowledge of job related skills

•       Have good administrative and computer skills

•       Is passionate and dedicated to the role

 

Skills

 

•       Ability to work in a multicultural environment

•       Very good strong leadership and organisational skills

•       Knowledge of HACCP as well as general health & safety in the workplace

•       Able to control cost and wastage

•       Must be proactive and lead by example

•       Have a high level of creativity and be quality focused

•       Thorough knowledge of various foods and their preparations

•       Gives direction and is responsible for the implementation of plans
