About the Role
 
A fantastic opportunity has arisen for a Junior Sous Chef, Cold Kitchen to lead operations in Main Kitchen within the Mina A’ Salam, Madinat Jumeirah Resort.  The main purpose of this role is to assists in managing all operational issues ensuring Jumeirah International & Madinat Jumeirah Standard Operation Procedures are met and value is added to the Culinary. Presumes full responsibility of a specific Outlet(s) in the absence of Chef de Cuisine and Sous Chef.
 
Your main duties will include the following:
 
  • Establish culinary standards for the specialty of each kitchen which include banqueting.
  • Help to plan menus and compile recipes for new menus and food tastings to be approved by Executive Chef and or Executive Sous Chef.
  • Using information available, plan the preparation, production and cooking of food appropriate to the section, to the required standard, ensuring guest satisfaction.
  • To fully understand HACCP and COSHH and take appropriate action to ensure a safe and equitable working environment whilst being sensitive to, and aware of, business levels in order to maintain a disciplined but harmonious department.
  • To ensure agreed quality of product is maintained and appropriate action is taken when standards are not met and CSI targets are not achieved by liaison with all key partners as necessary.
  • Assist Chef de Cuisine and Sous Chef in the supervision of all colleagues engaged in the Cold Kitchen.
  • Attend meetings when requested with Executive Chef/Executive Sous Chef and all other Senior Chefs regarding the updates for the day.
  • Communicate the information to line staff to ensure the operation is aware of any changes.
  • To help recruit, monitor and train staff ensuring regular appraisals are carried out with achievable objectives.
  • By analyzing market food trends, make appropriate menu suggestions and development within agreed timescales.
  • Any other duties as may reasonably be requested by the management.
About You
 
In order to be considered for this role you will have gained a diploma or equivalent in Hotel Management from an internationally recognized institution. A minimum of 2 years experience working in Culinary in a management role is essential. You will already have demonstrated your ability to deliver great commercial results and to manage and inspire a great team.
 
You will also possess experience of working with diverse cultures and have very good written and verbal English language skills. Proficiency in computer software systems such as MS Office is essential.
