Scope of Position

The Bartender maintains the efficient daily operation of Vida Rica Bar, meeting guest expectations for the quality of product and service. The position also requires the incumbent to support the Head Bartender in ensuring smooth daily operation, Maintaining of MOHG standard, Hygiene and HACCP, Pest control and food handling. Ordering of Beverages and stock management. The Bartender needs to be creative to create new cocktails of exceptional Quality and Presentation, in line with the offering of an Asia’s 50 Best Bars.

Job & Responsibilities

  • Ensure impeccable grooming at all times
  • Opening and Closing of the bar in accordance to MOHG Standards and Checklist
  • Ensure correct and accurate reporting at the end of each day
  • Ensure correct handling of cash float and liaising with finance department
  • Ensure smooth operations by having all equipment including menus ready, cleaned and sanitized
  • Ensure enough mise en place at all times
  • Ensure that bar is well equipped with all food and beverage items listed on the menu
  • Ensure timely ordering through SCM system
  • In case of unavailable items, follow up regularly on availability with purchasing department
  • Communicate unavailable items (item 86) to F&B team well in advance
  • Help to minimize beverage cost by maintaining reasonable PAR stock
  • Keep bar and service area clean at all times (bar area, service stations, chillers, red cabinets, snack station, guest tables, sofas, couches, bar chairs, etc.)
  • Adhere to all MOMAC HACCP and hygiene standards
  • Ensure highest hygiene standards at all times through labeling of food and beverage items, waste segregation, cleaning and sanitation of all bar equipment including blender and coffee machines
  • Report to supervisor in case of damaged bar furniture/equipment and liaise effectively with engineering department using HOTSOS system
  • Provides regular feedback to supervisor on how to improve recipes and decorations of beverage items
  • Provides weekly suggestions for new cocktails of excellent composition, taste and presentation
  • Warmly engages with all guest to maximize guest satisfaction
  • To guarantee guests are satisfied and return to the location based on their positive experiences
  • To ensure customer satisfaction from arrival to departure in accordance to standards and procedures manual and the Legendary Quality Experience (LQE) as well as our MO PILLARS.
  • Greet all the bars’ VIP upon arrival and share the on day VIP’s booking from outlets on the daily briefing
  • To attend and participate in all required meetings on a regular basis.
  • Handling reservations in an organized manner and communicate effectively
  • Maintains a good knowledge of all hotel facilities and is able to answer guest questions in a quick, polite and helpful manner.
  • Handles guest complaints or problems promptly, ensuring that any resolved/unresolved incidents are reported to the Supervisor and Bar Manager in a timely manner.
  • Ensures hotel policies and procedures are adhered to
  • Ensures statutory rules and regulations are adhered to e.g. Health & Safety at Work, Weights and Measures, licensing laws etc.
  • Demonstrates a working knowledge of fire prevention and ensures colleagues follow evacuation procedures on hearing the alarm.
  • Demonstrates security conscious behaviors in respect of guests, colleagues and hotel property / welfare and reports suspicious circumstances to the Manager.
  • Help to train new colleagues in the bar, act as role model and share your experience
  • To encourage proactive, efficient and effective inter-departmental communication in order to promote a climate of teamwork and enthusiasm.
  • Safeguard the security of the company's information and computing assets and comply with the implemented Information Security Policy and all practices and supporting procedures designed in accordance with the policy.
  • Ensure accountability for your actions and recognize that any unauthorized deviation from the information security policy may result in disciplinary action including termination of employment and prosecution under the applicable Macau law.
  • Perform any other reasonable duties as required by the Outlet Manager from time to time.
