Job Description
To act as liaison for the Executive Chef and the Galley Staff in order to identify the strengths and potentials of each person and to assign them to the location best suited to their talents;
To take active part in the actual food preparation;
Oversee the daily operation and safe food handling of the Galley personnel in conjunction with the Galley Utility #1;
To ensure a smooth and efficient service during meal hours through good communication with the Dining Room Staff so that food is sent out quickly and efficiently;
To ensure that products are consistently prepared according to the highest possible standards;
To ensure that all Galley personnel comply with the latest Health and Sanitation regulations (USPH and all other Port Health Authorities) at all times and to assist oversee the entire cleaning procedure for food handlers in the Galley;
To know the requirements of the Menus and to forecast and Requisition Galley items according to operational needs through the Provision Stores in conjunction with the Executive Chef;
To ensure that the Galley Work Registration Forms are completed correctly and handed in to the Executive Chef in a timely manner;
Other responsibilities, as assigned, but not limited to the above.

Financial Responsibilities
To keep leftover food to a minimum;
To assist the Executive Chef in controlling the food cost as well as the overall operational costs required in the Galley as required by the Mystic office, maintaining given standards and product quality;
To ensure that Company property is maintained properly and treated with respect at all times.

Safety Responsibilities
To ensure that the proper use of Personal Protective Equipment in the Galley work areas is implemented at all times;
To ensure that Safe Lifting Techniques are practiced at all times in the Galley Department;
To ensure all Galley Staff is instructed on all Safe/Proper Galley Equipment handling and to ensure that Safe/Proper Galley Equipment handling is practiced at all times;
To be familiar with the Company´s SMS;
To be familiar with the Ship`s Emergency Plan;
To do In Port Manning duties as scheduled and as required by Company policy.

Emergency Duties
To follow instructions on Safety Card;
To participate in Guest/Crew Lifeboat Drills as per instructions;
Other responsibilities, as assigned, but not limited to the above.

Team Communications and Meetings
To conduct meetings with the Galley Staff on a daily basis;
To communicate with the Executive Chef on a regular basis;
To encourage and demonstrate good communication, excellent teamwork and continuous training, coaching and counseling.


Culinary Institute or Chef Certification or other relevant apprenticeship required;
Minimum experience of four (4) years experience in a hotel or restaurant or three (3) years onboard a cruise ship in a similar position;
A sound knowledge of culinary arts and fine dining is essential;
Very strong, balanced background in International Cuisine and Cooking Techniques;
Strong knowledge in USPH and HACCP standards required;
Highly motivated with a strong drive and high level of energy and flexibility;
Very good spoken English;
Must have very good communication skills;
Must have very good administrative skills (Microsoft Office);
Must have excellent organizational skills and show attention to detail;
Must possess excellent leadership skills and the ability to interact with all levels of people;
Must be able to communicate and implement corrective action steps in an effective, yet diplomatic fashion;
Must be able to remain calm under pressure;
Needs to have an outgoing personality and has to possess a positive attitude, maintaining a friendly and approachable demeanour at all times.
