About the Role

As the Chef de Cuisine, you will be responsible for all culinary, operational financial and administrative standards of the Radii Kitchen. You will manage the kitchen as an independent profit center, in line with the outlet’s operating concept and Hyatt International standards; ensuring maximum guest satisfaction while operating within budget to ensure financial success. Managing a team of 10, you will support the Executive Chef in supervising and managing the day to day operations as well as supporting the team to achieve our purpose.


This varied and dynamic role provides a chance to develop your Hospitality career within an international company; either in Australia or overseas.  



Some of the responsibilities include:
  • Developing and maintaining recipes which allow the outlets to operate food and labor costs within the established budget

  • Review and analyze menu’s, recipes and food to determine costs, profitability and success of the outlet

  • Managing and supervising the Radii kitchen brigade in the performance of their duties and ensure learning opportunities

  • Ensuring the quality of all food items produced are of the highest standards

  • Controlling the requisitioning, storage and careful use of all operating equipment and supplies

  • Ensuring all culinary standards comply with Company and Hotel policies and procedures

  • Maximizing employee productivity and morale

  • Ensure all food, beverage and equipment items requirements are met including cost control and waste management

  • Mentor, train and guide the kitchen and implementing training programs for areas of need

Qualifications
  • Experience as a Head Chef / Chef de Cuisine in a large four or five star hotel or restaurant

  • Certificate III in Commercial Cookery (or equivalent)

  • Proven knowledge and experience in all operational and functional aspects of kitchen administration and operations

  • Proven experience in compiling menus, recipes and presentation of food

  • Exceptional communication, time management and people skills with the ability to lead a team

  • Sound knowledge of Kitchen P&L including labor and food costs

  • Strong focus on food safety systems including HACCAP

  • Proven leadership abilities including fostering an open and supportive environment where associates can have fun, take pride in their work and be their best

  • The confidence to promote ideas and make sound decisions under pressure

  • The ability to create a positive first impression with an understanding of the importance of 5 star grooming standards

  • The flexibility to work on a 24/7 rotating roster including public holidays
