Job description

 

 

Job Purpose
 
The position is responsible for the maintenance and repairs of all the Hotel’s Kitchen equipment and its appurtenances.

Primary Responsibilities
  
  • Operates, preventively maintains and repairs all hotel kitchen equipment, etc.
  • Complies with all established procedures, e.g. Work Orders, Preventive maintenance, Out-of-Order Kitchen Equipment, Emergencies, etc.
  • Through logs and utilities data, determines optimal operating efficiencies and takes necessary corrective measures when variance from standards are excessive.
  • Records and analyses operating logs and utilities.  Take immediate measures as necessary.
  • Carry out improvement, maintenance and repair work on all kitchen services and equipment according to the standards and requirements.
  • Perform daily startup, shutdown and inspection of building services and equipment according to the standards and requirements.
  • Maintain tools and equipment, and perform Engineering laundry work.
  • Complete the work order forms and supervise contractors.
  • To attend to complaints from Hotel chefs and other departments.
  • Handles emergencies in repair works.
  • Comply with hotel and department policies and procedures at all times.
     
    PROVIDES EFFICIENT REPAIR AND MAINTENANCE OF WALK-IN CHILLER AND FREEZER 27 UNITS
     
  • Operates, preventively maintains and repairs of all freezer/chiller
  • Checking compressor motor
  • checking  Evaporator fan motor
  • checking condenser fan motor
  • checking and re tightening control panel and bolts and nuts
  • checking possible Freon leak
  • replacing door gasket, door handle
  • checking flooring possible crack
  • checking door heaters, drain pan heater and drain pipe heater
  • checking vibration
     
     
    PROVIDES EFFICIENT REPAIR AND MAINTENANCE OF LAUNDRY EQUIPMENT
     
  • checking and re tightening control panel and bolts and nuts
  • checking all motors
  • replacing belts
  • checking steam pipe and air compressor motor
  • checking  heaters
  • checking vibration
  • checking steam generator boiler
     
 
 
INVOLVEMENT IN WIDER JOB FUNCTION ACTIONS/RELATIONSHIPS
 
  • Carry out preventive maintenance, repair or retrofit of electrical, mechanical plumbing, fire protection, life safety systems which directly relates to HACCP audit points.
  • Complies with kitchen energy management practices.
  • Attends departmental meetings or any other meetings as may be assigned by supervisor.
  • Assist engineering Team.
  • Assist contractors/suppliers

Profile
 
Knowledge and Experience
 
  • Must have 2 years of Vocational Engineering course. Degree holder would be an advantage.
  • At least 2 years experience as Kitchen Technician in a luxury hotel.
