About the job

  • To set direction & provide leadership for the whole Pastry kitchen brigade to maximise individual & team potential & develop future capability
  • To inspire exceptional team performance & mentor supervisors & team members in area 
  • Develop, oversee & trouble shoot day-to day capacity planning & performance management e.g. work schedules & rotas, HR systems; disciplinary issues; 
  • To build team capability, knowledge & resources to meet long term business objectives e.g. recruitment strategy, training system, career & succession planning
  • To provide oversight of Pastry Kitchen to ensure consistently exceptional “5 star” food & operational performance to maximize short & long term profitability
  • Establish operational & production planning to ensure full utilization of kitchen staff & products & direct activities to drive business profit
  • Develop an effective ordering & purchasing system to ensure appropriate stock levels for anticipated business
  • Design & deploy effective tools & guidance documents e.g. manuals, check lists
  • Identify, operate & maintain Pastry kitchen apparatus to ensure 24/7 effective kitchen operation & compliance with H&S legislation
  • Implement regular Quality checks to ensure maintenance of Dorchester standards
  • To provide strategic planning &  long term development of operational, financial & service goals across entire kitchen department
  • Develop & implement new concepts, new menus, products, services & standards
  • Anticipate future culinary, technology & market trends & align kitchen service offer
  • To act as a key spokesperson for the Pastry kitchen to achieve Hotel vision & build & enhance positive brand image – with internal & external stakeholders
  • Develop & lead regular departmental meetings
  • Work across departmental boundaries to improve & harmonize procedures
  • Participate in & represent The Dorchester at external industry events & conferences
  • Extensive experience in large event catering
  • Good understanding of planning and execution of high profile outside events
  • Proven track record in Afternoon Tea production and development

  • In depth knowledge & application of 5 star kitchen processes and operations
  • Strong understanding & application of French; Asian, British & International cuisine
  • Excellent knowledge of French Kitchen terms
  • Proven understanding & application of hospitality Industry & legislation e.g. Health & Safety, licensing; employment law
  • Proven experience & deep understanding of the application of core kitchen process e.g.:
    • Menus development, installation and training process
    • P&L & Cost management: Ordering systems and understanding yield processes
    • Equipment trends, costing, application and maintenance
    • Excellent computer skills to include word, excel and email
