Job Summary

Top Chef Master Chris Cosentino is looking for an experienced, reliable team player to join our Jackrabbit kitchen!
Are you ready to work in a fast-paced, engaging environment, and for a certified 2018 Great Place to Work? This is a full time position with a starting pay rate $16.50/hour with increases after 90 and 180 days, and offering health insurance along with the best employee travel program in the industry!
For this role, we are seeking candidates who:
- Have at least three (3) years of professional culinary experience in a fine dining restaurant kitchen
- Have open schedule availability, able to work AMs, PMs, weekdays, weekends and holidays. Schedule will vary based on business need.
- Culinary degree preferred but not required

What will I be doing?
First cook is an advanced cooking position, responsible for maintaining, setting up, quality food production and quality control of a specified work area, including meats, fish, poultry, stocks, pastas, vegetables and complex soups and sauces.  Must be able to prepare food items for either catered functions or stations on the line.  First cook sets the pace for the line and helps to guide the other cooks toward success.
In this role, you would be responsible for preparing food items in accordance with recipes and established standards in the hotel''s continuing effort to deliver outstanding service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:
  • Prepare food items in accordance with specifications and recipes or guests'' requests.  Ensure that all food items are fresh by inspecting and tasting for correct seasoning.
  • Control working environment for the entire food station assigned.  Must comply with local and company health regulations.  Must demonstrate and teach correct food handling and storage techniques and train all staff involved.  Ensures that all cooks are cross-trained in all stations, have proper products to meet operational needs and supervise in Chef''s absence.
  • Plan menu products to meet operational needs and timeliness of production.  Assist with specification and recipe development.  Prepare requisitions for supplies and food items for production in the workstation.  Reads and employs math skills to appropriately prepare items according to recipes.
  • Requires stamina for standing and strength for lifting and moving products. 
  • Practice teamwork and clean as you go policies.
  • Maintain correct equipment storage and calls in all maintenance issues.  Monitor wholesomeness of food, especially high cost meat and fish items.
  • Take breaks and assign staff to take breaks according to break schedules.

What are we looking for?

Education:
Any combination of education and experience that provides required knowledge, skills and abilities, preferably formal culinary training.  Culinary degree is preferred.
Experience:
A minimum of 3 years of fine dining experience required.
Licenses or certificates:
Multnomah County Food Handler''s Certificate required.
Grooming:
All employees must maintain a neat, clean and well-groomed appearance (specific standards available).
SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY
The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities.
  • Basic mathematical skills necessary to understand recipes, measurements, read recipes and communicate with other employees.
  • Sufficient manual dexterity of hand in order to use all kitchen equipment; i.e., knives, spoons, spatulas, tongs, slicers, etc.
  • Ability to read and write the English language in order to complete requisitions, read recipes and communicate with other employees.
  • Ability to stand and work continuously in confined spaces.
  • Ability to perform duties within extreme temperature ranges
  • Advanced knowledge of all phases of cookery.
  • Ability to grasp, lift and/or carry, or otherwise, move or push goods on a hand cart/truck weighing a maximum of 200 lbs.
  • Good working knowledge of accepted standards of sanitation.
  • Operational knowledge of all kitchen equipment; i.e., stoves, ovens, broilers, slicers, steamer, kettles, etc.
