Summary of Responsibilities:

Reporting to the Food and Beverage Director, responsibilities and essential job functions include but are not limited to the following:

  • Position the restaurant as one of the top dining choices in the Whistler

  • Working closely with the Restaurant Executive chef to execute a smooth and flawless operation for both the Front and Heart of House (inclusive of restaurant and kitchen).

  • Ensuring optimal performance by being a consistent presence on the floor to support and lead the team to deliver service excellence.

  • Motivate, lead, coach and monitor the performance levels of all team members

  • Direct, as well as participate in the training and coaching of new and existing team members.

  • Drive revenue and profit through the development and implementation of strategies, practices and promotions while maintaining the integrity of the overall concept.

  • Drive the restaurant budgeting and forecasting process while adhering to the budgetary guidelines established for the outlet (labour productivity, revenue and expenses).

  • Demonstrate, and hold the team accountable to, the highest standards of internal and external customer service at all times.

  • Manage the beverage inventory and ensuring cost controls are in place.

  • Demonstrate a talent based approach to recruitment, including creating, evaluating and executing effective recruitment and retention strategies for the department.

  • Create and maintain effective scheduling  practices to ensure adequate staffing levels that satisfy guest and business needs, while following the Collective Agreement

  • Work closely and in partnership with the culinary & stewarding teams to ensure that all food service exceeds guest expectations, and promote teamwork as a strong component of the daily service culture

  • Effectively monitor and continue to develop Food & Beverage controls.

  • Drive and promote the growth and development of internal talent.

  • Continuously generate innovative new ideas and promotions to maximize and increase revenues.

  • Foster and maintain high colleague engagement, performance and team spirit within the department.

  • Provide leadership and participation in relevant community events.

  • Manage the social media accounts of the restaurant in accordance with marketing standards (i.e. Facebook, Instagram, Twitter)

  • Manage online reputation by responding in a timely and professional manner and handling any concerns (i.e. Revinate System).

  • Follow up on guest complaints and ensure appropriate internal follow up, including implementing training resolutions and effective performance management where applicable.

  • Collaborate with other departments to ensure effective operation of the hotel.

  • Participate actively in the Vancouver restaurant community.

  • Actively participate in The Fairmont Sustainability Program / Planet 21 and determine department specific action items.

  • Direct and maintain the safety and sanitation of both front and heart of house restaurant operations per provincial health regulations& Ecosure standards.

  • Constantly drive innovation to be the “Hottest Place in Town”

  • Work a flexible schedule that meets business demands, including evenings, weekends and holidays.

  • Owner of the restaurant marketing plan from idea to execution.

  • Owner of the restaurant social media calendar.

  • Chair of the weekly marketing meeting.

  • Other duties as assigned.

 

 

 

 

 

 

 

 
 
 

Qualifications:

  • Minimum of 2 years’ management experience as a department head in Food & Beverage

  • Demonstrated passion for the Food and Beverage industry and knowledge of current trends

  • Demonstrated ability to drive revenues and profit, without sacrificing colleague and customer experiences

  • Proven ability in menu design, offerings, effective marketing plans, and on-line reputation management

  • Product knowledge, including a thorough working knowledge of wines, liqueurs and other beverages.  Sommelier designation is an asset.

  • Proven successful financial performance of restaurant under their operation

  • Thorough working knowledge of financial reporting structures (budgets, labour, productivity, revenue, and expenses)

  • Excellent communication and organizational skills

  • Strong interpersonal and problem solving abilities

  • Highly responsible & reliable

  • Ability to work well under pressure in a fast paced environment

  • Ability to work cohesively as part of a team and build relationships

  • Ability to work effectively with the following programs, Microsoft Office Suite, Open Table, Avero Slingshot, Opera, Micros/Silverware, Revinate, Instagram, Twitter, Facebook etc

  • Previous experience in a luxury hotel restaurant is an asset

     

Physical Aspects of Position (include but are not limited to):

  • constant walking and standing throughout shift
  • frequent lifting, pushing and pulling of 25 lbs or more
  • frequent kneeling and bending
