Job description

The Fat Bear is seeking a new Chef de Partie to begin in March.

We are a small (32 cover) multi-award-winning restaurant based in St. Paul’s/Blackfriars that serves a menu of American regional cuisine (predominantly Southern), serves superb cocktails, wine and spirits, and has a very strong emphasis on service. We've been trading for over 5 years and are potentially planning to begin expansion to a second site next year - potential for new staff to grow with the business.

Our core governing principles are those of Danny Meyer’s ‘Enlightened Hospitality’. As such we look for emotionally intelligent and passionate people, whether they're customer-facing or in the kitchen.

Hours are offered at 35, 40 or 45 hours per week, pay anticipated to be £21-28k dependent upon number of shifts. We believe in our staff having a work-life balance – this is not a case of “get paid for ~40, work 60+”. The role is as a full-time employee (7, 8 or 9 shifts), with full statutory amounts of paid leave per year (e.g. 28 days if on 45 hours). Pay is from a mix of base salary and typical tronc – there is also the chance for tronc bonuses too. Effective minimum hourly rate of £11.50 total package.

The ideal candidate will currently be a CdP (or similar), though we’d consider anyone with extensive commis experience wanting a step up. Familiarity with the cuisine is a bonus, and candidates with it will be preferred, but it is not essential – the management team already have the expertise. Must be willing to work in a tight brigade with a similarly small kitchen.

This is an excellent opportunity for a CdP to work with a small team in a quality-oriented environment. The role will entail cooking, cleaning, compliance with HACCP, stock-taking and general duties you’d typically expect.
