About the role

We are currently looking for a passionate Chief Steward / Back of the House Manager, to lead our Stewarding Department. At The Landmark London, our purpose is to enrich the journeys of our people and our guests and as a Chief Steward / Back of the House Manager, your main duties will include:

• To carry out all tasks as directed by the Executive Chef and to assist in any other areas or duties within the kitchen/ hotel upon request.
• To ensure the smooth running of the Stewarding Department and Staff Restaurant and maintain the Back of the House areas to the highest standards of cleanliness and safety.
• To manage all budgets for both departments ensuring costs are in line with the agreed budget and fully explain monthly results at each P+L meeting.
• To pro-actively ‘walk’ all BOH areas and check standards and document, taking remedial actions where needed.
• To regularly spot check mis en place levels and quality for all F&B outlets, taking appropriate action where necessary.
• To ensure that all equipment for which you are responsible is stored and provided to the various outlets in the highest standard of presentation and in a hygienic manner.

• To ensure a banqueting water sample is sent on the first day of each month for bacterial analysis, take appropriate action if required.
• To ensure that night cleaning is carried out to the required hotel standard and is in line with the agreed contract. Spot check and monitor standards on a regular basis, give feedback and take appropriate action when required.
• To ensure a quick, efficient and flexible service is provided by both teams at all times.
• To supervise and guide all stewarding and Staff restaurant team members working practices, standards and mise en place. To give feedback or take any other appropriate action such as disciplinary hearing meetings when required.
• To oversee and drive recruitment for Stewarding and Staff Restaurant by interviewing new candidates, ensuring the company’s recruitment process is followed.
• To ensure all new starters are correctly managed. To include: departmental induction, safe systems of work training, COSHH training and manual handling training.
• In line with Success Factors personally conduct and ensure annual performance reviews are completed and that low or high performers are followed up with any appropriate actions.
• To create, implement and update the training programme for both departments and monitor its progress.
• To ensure personal and team compliance for all mandatory training shows.
• To ensure the team uniform, appearance and personal hygiene is in accordance with hotel policy and procedure.
• To regularly review all working practises within the departments and propose change to ensure continual growth.
