• Making sure freezers are at correct temperatures to store meat so that it is safe. • Compiling on daily, weekly and monthly basis all relevant meat stock sheets information on cost for forecast planning and budgeting. • Purchasing Placing, follow up, receiving, inspecting quantity and quality of the items and analysing of the invoice of the purchase, issuing and preparation of meat dishes within the establishment for final provision and services to the customer. • Price comparison amongst the suppliers • Determines the ingredient and equipment to be kept at the butchery section inventory • To maintain effective control of raw material, labour, equipment costs used at the butcher section. • Carrying out temperature checks on meat and recording the readings accordingly. • Cutting, trimming, boning, tie and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking form. • Using cutting machinery to cut and prepare meat as required by the Head Chef. • Record quantity of meat received and issued to chefs. • Inspect and store meat upon delivery, to ensure meat quality. • Sharpen and adjust cutting equipment. • Keep inventory of meat and order meat supplies. • Clean equipment and working areas using the three-bucket system to maintain health and sanitation standards
