I was recruited to build and train a team of butlers/waitresses in the palace of a member of the Qatari royal family [2 adults and 4 children], establishing SOPs and raising the standard of service within the palace. I trained a team of 5 staff from 3 different countries, teaching them all types of service [including silver service], correct set up for various functions both inside and outside, managed functions and parties for the family, and managed all service during Ramadan. Also responsible for menus through liaison with the head chef and pastry chefs, nutritionist and palace manager.

Sage and Sirloin is an exclusive delicatessen and butchery which was intended to be rolled out so that there would be new branches in Bahrain. Unfortunately, the planned expansion did not take place and the management of just one outlet was not enough for me. I was entirely responsible for the daily operation of the delicatessen and butchery, devising and implementing new menu items, managing external catering including several functions for royal family members, and barbeques. I also trained all new staff to high standards.
