Managing and ensuring service delivery of all 07 F&B outlets, guarding and optimizing completion of the
standards, creating and execution of commercial strategies.
Involved in projects from conception right through to completion, including pitching, budget control and onsite
management. Opening of 02 new F&B Outlets.
Responsible for the daily operations of the F&B outlets:
Pullman: HUB Restaurant, Iconic Bar, Deli Nespresso Bar, Room Service
Grand Mercure: Cipo Bar & Restaurant, Room Service
+ Banqueting, 14 modular meeting spaces and a foyer of 535 m2.
• Supervising 10 F&B Leaders, +90 F&B staff & cashiers; 60 Kitchen Staff
• Staff recruitment, training and development - Purchasing, stock and inventory control – Budget & FC
• Business development through implementation of new strategies and fresh ideas.
• Producing and managing events as well as creating new dynamics in the Points of Sales.
• Creation and optimization of menus: Banqueting KIT, Enoteca Wine Library, POS menus
• Track record in the creation and delivery of high impact projects that improve the relationships, raise
profit and revenue: Reestablished the Outlets Dynamics with Social Events and Art
• Roll-out of SOP's, LQA and HACCP programs
• Redefined 100% of the Cave and Wine Strategy
