    After my career in "high end" restaurants in Europe, I took the chance given to me to manage a new concept restaurant in Dubai. Fume was the casual approach of a fairly new company in Dubai named JAS Hospitality, consulted by a pioneer company named EPJ, both located in Dubai. The company's goal was to create successful F&B concepts in Dubai and export them all over the world. Fume was a success in the local gastronomic scene and within a year we signed the 2nd Fume in Dubai and the company was bought by the Sheikh of Dubai. My Job description: * Create all the S.O.Ps. and the Manuals of the new concept based on the guidelines of the new brand we created and train the F.o.H staff according to the brand's guidelines and basic principles of service. * Ensure the smooth daily operation of the outlet considering the customers, the suppliers and the partner companies such as the Address Hotel and the Marina Mall, both part of Emaar group, and instruct the managers to their duties. * Annual budgeting and profitability of the company. * PR with the guests, determine the social media strategy, being the "face of Fume" for the local press, guard the brand's values was also part of my duties. * Oversee the table plan. The outlet had a capacity of 140 seats and we managed to serve 500 pax a day approximately as a "1st come - 1st serve" policy. * Report daily to the owners, the restaurant's statistics and revenues and monitor daily the actual revenue in relation to the estimated.

Moritz in the winter season, to continue my career in a more demanding role. I worked a lot with my staff and their ability to up-sell daily. As a result, we achieved the best year ever in our stores in Mykonos (as an F&B department) with more than 20% revenue above the estimated budget. This success was combined with a 9% economizing of the operational expenses. My Job description: * Annual budgeting of the F&B department for both outlets, The Belvedere Hotel and Matsuhisa Mykonos the restaurant. * Oversee the "Seating Plan" of the outlets. Approximate 250 covers in the restaurant with a capacity of 110 seats, was our daily average in the high seasons. * Weekly schedules and administration for the F&B staff (62 members) * Daily operation "Manager on duty" for outlets. (More detailed agenda for the daily tasks will be provided upon request) Big Projects: * Opening of the newest hotel of the company, the "Seaside Cottage by Belvedere" in Mykonos. Together with the owners we defined the F&B concept, such as the breakfast, the menus the working hours etc. * G.M of the promotion "Matsuhisa Mykonos in Grace Santorini". In October 2013, our chefs and I travelled to Santorini island to take over the restaurant of the Grace Hotel for 10 days.     "Nobu Concept" is globally well known for the quality, the social status and the funky ambience, so for me as the representative of a Nobu Restaurant in the Sales & Events department, I was working on a strict but fun agenda: My Job description: * Annual budgeting of the Sales & Events department. * Craft, cost and promote the Sit Down Set Menus, the Canape Cocktail Menus and the Bar proposals were my responsibility in Matsuhisa Athens. * Deal with the Corporate Accounts, the Japanese Embassy and the Greek - Japanese Chamber of Commerce * Daily my aim was to attract new customers, entertain the VIP customers, set and promote the "Sales & Offers" policy of the restaurant and deal with all the restaurant's activities such as Events, Catering, Private Dinning, Cooking classes, Promotion Events in the "Astir" Hotel Complex, Website updates... (More detailed agenda will be provided upon request) Big Projects: * Organizing the "Posidonia 2012" in Matsuhisa Athens. With more than 18 events in 10 days and more than 5.000 guest to serve Matsuhisa Athens overcomes and stretches the limits of fine dinning. It is worth mentioning that "Posidonia" is one of the biggest "celebrations" of the shipping industry of Europe. * In July 2011, I organized the 1st Umami Dinner in Greece with the presence of Nobusan- Owner of all Nobu and Matsuhisa restaurants around the world , Dr. Kumiko Ninomiya- Director of the Umami Information Center and Mr Paolo Basso- Best Sommelier of Europe. Organizing the most prestigious gastronomic Event in Greece for 2011 was not easy, especially because I had to source and promote, in a distinguished way, the sponsors of this Event, which were "Bentley" "Lufthansa" and "S. Pellegrino" . * On June 2010, I organized the "Posidonia 2010" in Matsuhisa Athens with great success. The Gross income of these events in 10 days reached the 10% of the Annual Gross income of the restaurant. * Opening and Promotion of the "Martini Bar" in Matsuhisa Athens. Designed by the Rockwell group, dressed by Neil Barrett and consulted by Dale Degroff, the "Martini Bar" is considered the most sophisticated and classy bar in the south suburbs of Athens. www.matsuhisaathens.com
