    The Edge Hotel School is the first hotel school in the UK. The degree is short course meaning we complete our BA (Hons) in only two years, this makes the degree highly intensive and challenging. Being a vocational course we work in all departments of Wivenhoe House Hotel throughout the two years. This gives us not only real life practical experience but also something tangible to link with our academic studies resulting in higher levels of learning and understanding. Wivenhoe House is a luxury 4 star country house property. I rotate between every department, currently in a managerial capacity. Previously I have worked in all departments in operational and supervisory roles.

    The Foundry Restaurant is situated in Theatre Severn, a popular West Midland venue. The restaurant served freshly made seasonal dishes, providing light lunches during the day and a fine dining experience for theatre goers and members of the public in the evening. I worked front of house which encompassed waiting on, bar work and looking after business and private functions. My role also consisted of general supervisory duties such as ordering and monitoring of stock, running of services, writing rotas and cashing up. I also spent a year working on all sections in the kitchen. My time in the kitchen taught me not only culinary skills but also how a professional kitchen is managed. Whilst at the Foundry I completed two NVQs; Food and Beverage service level 2 and Hospitality and Supervision level 3.
