Aside from the a la carte service the restaurant also offers buffet for functions and special occasions. We are serving fresh handmade fusion sushi in our outlets and presently In-charge with Sushi Station. Reporting daily to our Chef de Cuisine before proceeding to my station. Checking and refilling mise en plus, expiration date of the items, availability of the items for Ala Carte, cleaning and sanitizing the area and equipments before opening the station. Cleaning and cutting fish and maintaining fish items fresh and in good quality. Checking Banquet Event Orders for preparation. I am also flexible as a reliever in-charge at Cold Station and give help and assistance to Pastry, Pizza and Hot Station. Making the reports as a compliance to HACCP and kitchen monitoring records and orderings. Before closing the station I regularly check all the items, making sure the station is ready for the next day. Cleaning and sanitizing the station and equipments before closing. Reporting to our kitchen In-charge with regards to our kitchen issues and any necessary ideas. Giving handover and checking schedule before leaving the kitchen.
