I spent my Practical Training Semester in the Island Shangri-La's French Fine Dining outlet, the Restaurant Petrus. As the name suggests, the focus is on the restaurants impressive high-quality wine selection. I was given the chance to assist the Sommeliers, one of them being Master Sommelier, as a commis de vin for half my time in the service side. This was an extraordinary opportunity to improve my skills regarding wine description, wine service and wine selling. The other half of my time on the floor I worked as a commis, which was a memorable time and I gained extensive knowledge of the work in a fine-dining restaurant. I concluded my time in the Shangri-La with a month in the kitchen of the Petrus, as I wanted to gain insight into the 'other side' of the restaurant as well.

During my studies I worked in this high-class restaurant as a Chef de Rang occasionally. It is a restaurant of a winery, with top notch Austrian cuisine. I worked mainly at weddings and large events with up to 100 people. Small team, depending on the event 3-6 waiters. Was a great time, and as soon as I am back studying in Austria I will continue working there.

Great experience, I could learn a lot from my more experienced colleagues and was able to perfect my service skills.

Internship in an 'entertainment' restaurant. This restaurant was split in two parts: the main restaurant with space for up to 250 people with traditional and modern Suisse styled cuisine. Also upscale wines and menus. The second part is regarded as 'Grandmothers House': basically, an atmosphere from 100 years ago is created. No softdrinks, simple food and wines in a genuine old house. Us waiters had to tell the story of grandma, and let our guests feel like 100 years ago. A very busy restaurant in the beautiful scenery of Appenzell. Team of around 10 waiters. I worked in both parts, wherever workforce was needed. First experience abroad, and I enjoyed it.
