I am currently working within Hugo’s restaurant, based on Merrion Row, I am continuing my culinary training within the restaurant under the teaching of Margaret Roche.

I trained within L’Ecrivain as part of my college placement which hired me for the summer. Within my training here, I have worked within the hot kitchen and pastry section learning the running of the kitchen, completing prep/mise en place and completing service within the restaurant each night with learning how to have speed throughout service. Within the restaurant, I have learnt about the preparation of many high classed foods and the making/preparation of such ingredients and dishes.

Within this employment my job title was a commis chef, in working here my daily tasks included restaurant a la carte service, working large functions cooking and service from 100-800 people, prepping daily for functions and restaurant prep, bakery and pastry training, through working here I have learnt basic knife skills, sauces, pastry work, restaurant service and I have become quicker in terms of service.
