Main Duties:
  • To participate in the preparation of the Annual Business Plan to ensure the culinary operation is adequately represented
  • To formulate and continually upgrade a Departmental SOP Manual, detailing standards of Performance, Policies, and Procedures, and service standards pertinent to the efficient operation of the outlet in accordance with Jumeirah Emirates Towers policies & Municipality requirements
  • To interact with the management of other departments within culinary areas of responsibility and to develop and maintain effective working relations with them
  • To oversee the culinary process including the planning of menus and designing standard recipes in order to ensure consistent quality in food production, and thereby satisfying guest needs and expectations
  • To liaise with purchasing in order to ensure prompt and efficient buying and issuing of supplies alongside regulating stock and inventory
  • To liaise with Back of the House Manager from the Stewarding Department to ensure an adequate supply of equipment and to establish standards of hygiene and cleanliness for all kitchen areas
  • To frequently verify that the dishes served in the outlets meet expectations and hotel standards
  • To provide creative culinary ideas in order to protect and enhance the Image of the hotel
  • To identify market needs and trends in terms of food for both hotel guests and the local market
  • To  monitor and analyse the menus and products of competitive restaurants and other hotels' Banqueting Departments
  • To assist in the building of an efficient team of colleagues by taking an active interest in their welfare, safety, training, and development.
  • To demonstrate commitment to the development and implementation of the HACCP and continual improvement of its effectiveness.
  • To make recommendations to management for the modernization of equipment, service methods and presentation to improve guest satisfaction
  • To liaise with engineering to ensure prompt and efficient repair and maintenance when necessary
  • To perform any other duties that management may reasonably require
  • About you:
     
    Qualifications:
    • Able to converse well with guests and media if necessary
    • Post graduate in Hotel School
    • Advance food & hygiene certificate
    • Advance HACCP certificate
    • First aid certified
     
    Experience:
    Essential:
    • 3 years in a similar role in an international 5* environment
    • Total of 15 years’ experience in running restaurant and kitchen production operations
    • Participated and experienced in culinary competitions
       
    Desirable:
    • Experience in  managing multicultural environments preferably in Asia and/or Europe/London
    • Knowledgeable in international cuisines, which include Asian, Arabic, German, French and Italian.
    • Pastry and/or bakery experience
    • Experience in large catering events
