Executive Chef Manage all kitchen operations including Stewarding operations with an emphasis on maintaining hygienic standards and practices, staff training, and overseeing the peparation and presentation of a consistent food product which meets customers expectation.  

Key responsibilities:

  • Manage all functions of the Food Production and Stewarding operations to achieve the optimum departmental profit

  • Ensure training needs analysis of Kitchen staff is carried out and training programmes are designed and implemented to meet needs

  • Coach, counsel and discipline staff, providing constructive feedback to enhance performance

  • Determine with FC the minimum and maximum stock of all food, material and eqipment

  • Be aware of duty of care and adhere to occupational, helath and safety legislation, policies and procedures

  • Be familiar with property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly

  • Select end recruit suitable employees for the department using prescribed set of policies and procedures

  • Implement and practice HACCP

  • Conduct annual performance evaluations

  • Comply with all Kempinski company policies

  • Additional responsibilities and tasks can be added at any time according to the needs of the business and of the hotel



Desired skills and qualifications:

  • Bachelor's degree in the culinary arts
  • Minimum 2 years of experience as Executive Chef in 5* Hotel
  • Ability to manage an entire kitchen
  • Budgeting skills to control costs
  • Incredible food preparation abilities
  • Ability to handle multiple tasks at once
  • Deep knowledge of the food industry and trends
  • Incredible time management skills
  • Ability to create new menu items
  • English – excellent oral and written skills
  • Croatian and Italian language - beneficial
  • MS Office (Word, Excel, Access)
