Location:

Sheraton Melbourne Hotel is located on Little Collins Street between Spring Street and Exhibition Street, also referred to as the "Paris End" owing to its Art Nouveau architecture, leafy surrounds and proximity to the city's most chic dining and shopping experiences. The hotel is located within the 31 storey "wavilinear" building which features 174 deluxe guest rooms and luxury suites. Hotel facilities include an indoor heated swimming pool, fitness center, a spa with 5 dedicated treatment rooms, one all day dining restaurant, lobby lounge bar and a rooftop terrace bar. The hotel also features 669 square meters of meetings and banquet space over 6 flexible rooms.

Department:

The Food and Beverage Division is responsible for providing an exemplary service to guests visiting any of our finest F&B venues – our Signature Restaurant – Little Collins Street Kitchen, Terrace Bar and Banquets.

Job Description:

  • Accountable for all the financial aspects of the business with regards to Food & Beverage.
  • Responsible for the day to day management of Associates working in the Department and maximise employee productivity through enhanced skills, knowledge and direction.
  • Support the Food & Beverage Manager to develop and implement Food and Beverage promotions, strategies and special events in conjunction with the Executive Chef and the Director of Sales and Marketing.
  • Analyse and respond to guest feedback, guest satisfaction and employee satisfaction information; and give a positive commitment to continuous improvement of product and performance.
  • Responsible for departmental recruitment, training and performance evaluations. Responsible for the development and implementation of a training plan to ensure a high quality presentation and level of customer service from the departments' associates.
  • Ensure turnover reduction and optimisation of productivity through efficient work practices and staff rostering.
  • Negotiate Food and Beverage contracts within corporate guidelines and coordinate Hotel wine lists, offering choice and variety as well as price consistency throughout the venues.
  • Personally ensure compliance with all relevant Workplace Health & Safety and Occupational Health & Safety legislation, and related hotel and Marriott Int. Policies.
  • Co-ordination of all aspects of the departments operation to ensure that the services of the Department are delivered to guests or internal customers with the aim of exceeding guest expectations and in accordance with Westin's standards and procedures.
  • Responsible for maintaining a strong client relationship and ensuring that all convention specifications are communicated to and executed by all hotel operating departments making for a successful meeting experience for the meeting planner and attendees. 
  • Manage inventory, control and breakage/loss reduction of china, glass and silver.
  • Conduct development and performance reviews, identifying key associates for further development and structured career pathing.
  • Conduct regular departmental meetings to keep all associates informed and actively promote a work environment, which cares for guests and associates alike.


Requirements:

Minimum 2-5 years experience within a management or supervisory role in a 4 or 5 star hotel restaurant environment or highly regarded restaurant is essential.

  • The successful candidate will possess strong leadership, management and communication (verbal and written) skills.
  • Strong attention to detail and customer focus.
  • Must have the flexibility to work on a roster including public holidays and weekends.
  • Advanced food and beverage service and wine knowledge.
  • Flexibility to work rotational shifts, weekends and public holidays
  • Valid Victorian RSA
  • Proven ability to maximize revenue
  • Proven hands on approach to management
  • Qualifications in hospitality management or related discipline
  • Certificate IV in workplace training and assessment is desirable
