About the role...
Responsible for the food delivery and kitchen management of the LEGOLAND Florida Resort restaurant and bar. To create memorable experiences by maintaining consistent high standards of service to guests, ensuring all staff are fully trained to adhere to all company standards including KPIs, cleanliness, cash handling, financial controls in line with company policy as well as ensuring compliance with legislation relating to health and safety, licensing laws and hygiene regulations. Will be responsible for hiring, training, development, performance management, team building, and other culture and people management activities.
This position supports Hotel Food & Beverage operations at LEGOLAND Florida Resort and is a full-time job opportunity.

What you’ll be doing...
- Work with the Head chef to manage the Food Offering to ensure we consistently deliver high quality food and achieve company Key Performance Indicators
- Work with the Head Chef to develop and deliver menus ensuring quality, profitability and safety is met to the highest standard and agreed parameters
- Deliver Food & Staffing costs at the agreed budgeted levels
- Oversee strict compliance with all relevant Health and Safety legislation and requirements
- Oversee performance management of the kitchen team in accordance to local policy
- Oversee the stock control and inventory as per the Merlin Operating Manual
- Continually review all key quality and guest satisfaction measurements to ensure they are relevant to the maximization of revenue via customer satisfaction.
- Function as the primary stakeholder in terms of food product and quality (ensuring a high standard of food production and presentation at all times to specification), continually reviewing all key quality and guest satisfaction measurements to ensure they are relevant to the maximization of revenue via customer satisfaction.
- Continuously drives actions to ensure key KPIs exceed targeted scores.
- Regularly check the occupancy to gauge and forecast the demand.
- Manage of all kitchens and storage areas comply with the food safety policy and in line with Merlin audit standards and local regulations.
- Implement and maintain robust audit trail for all areas of the kitchen in line with food safety regulation.
- Manage, maintain and, complete all compliance of all kitchen files in line with food safety regulation.
- Ensure compliance of SOP and general kitchen standards at all times in conjunction with the Sous Chefs.
- Manage all kitchen deep cleaning programs, ensuring all cleaning materials and equipment within the department are used in conjunction with manufacturers specifications and as laid down in the SOP manual.
- Perform weekly Manager on duty based upon schedule assigned
- Ensure that monthly inventory of stock items are complete with review and act upon results.
- Ensure all cleaning schedules are in place and implemented as per schedule.
- Maintain a close working relationship with the rest of the Hotel departments and Resort, continuously liaising with the Hotel team to ensure seamless and efficient flow between front and back of house operations

Who we’re looking for...
Requires progressive years of professional-level experience in kitchens and 2 years’ experience as either Kitchen Manager or kitchen/restaurant role. A proven track record in managing cost of sales required. Underpinning knowledge of food safety required and proven record to obtain industry standards at the highest level. Industry experience in a theme park, hotel or resort preferred.
