Job Description

As Executive Chef you will be responsible for leading the overall kitchen operations of the hotel.

Through supervision and organization, you must ensure that food is prepared and presented in accordance with the established standards and that a high degree of cleanliness exists throughout the kitchen areas.

Actively seeking way to improve on the established high standards. The responsibility of the Executive chef is to train and manage kitchen team members, supervise/coordinate all related culinary activities.

Full accountability for all food related costs through the hotel operation – Strong focus in maintaining margins in both forecasting food and consumption.

Maintaining the highest level of consistency through quality, presentation, cooking techniques,

Pro-active planning of menu engineering and full outlet pricing reviews in line with competition.  Supported by the passion to ensure all Equipment, Environment and supporting areas comply to FSMS and HACCP regulations.

Coupled with the large hotel operations you will have an amazing opportunities to showcase you culinary leadership and creative menu development through our numerous outside catering events.  Also to lead the development of Menu offering in our Market leading Signature Benihana Japanese Steakhouse.

As Executive Chef you are directly responsible for hiring, people development and performance reviews of the kitchen team. Reporting to the Resident Manager, you will be responsible for overseeing and providing functional assistance of you kitchen team to other aspects of the hotel.

As a Key stakeholder in the results of the hotel, your focus will be on Improving standards, driving revenue opportunities and ensuring that we always have a profitable kitchen operations. As a Key leader in the hotel operation you will be expected to be visible and leading by example the interaction with individuals outside the Hotel including, but not limited to, guests, suppliers, governmental officials, competitors and other members of the local community.

SPECIFIC JOB KNOWLEDGE, SKILLS AND ABILITIES

You must possess the following knowledge, skills and abilities and be able to explain and demonstrate that you can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of knowledge, skills, and abilities:

  • Strict Adherence to Hygiene requirements.
  • Ensure the Safety and security within the department, particularly HACCP / FSMS standards.
  • Maintain a positive development plans for your Kitchen teams.
  • As a team player develop a cohesive relationship with your peers from supporting departments.
  • Leading by example - Behave and acts in an exemplary fashion, embodying the brand mind-set.
  • Deliver and coordinate the organisational, preparation, production, presentation requirements and assure the high standard of culinary services offered to guests
  • Make suggestions for improvement on the overall hotel operations.
  • Manage all kitchen personnel and adapt management practices to the brand culture, working methods, communications, recruitment etc.
  • Help employees improve their skills and provides support for career development.
  • Flexibility in your approach to guest requests.
  • Visibility is key to the success of this role, be it In house or outside catering opportunities.
  • Ensure Food costs are controlled in line with business requirements.



Qualifications

  • Previous experience in a large major city hotel 500+ or (similar combined experience to meet the volumes)
  • Bachelor’s Degree or equivalent education/experience required.
  • Proven track record of success with a Minimum four to five years of related industry and culinary management experience.
  • Previous experience with demonstration cooking, menu development, and pricing development.
  • Passion for leadership and teamwork.
  • Eye for detail to achieve operational excellence.
  • Excellent guest service skills.
  • Must be able to speak, read, write and understand the primary language(s) used in the workplace.
