Chef de Cuisine - Bleu Blanc (French Restaurant)

Sobre el trabajo

• Must have experience in French and Provence cuisine.
• In charge of managing culinary team and ensuring brand standards and expectations are met.
• Staff scheduling, reviews all daily and weekly reports, performs various HR functions, manages labor, cost and food waste.
• Ensures that chefs are performing and cooking towards brand standards.
• Help to facilitate a warm, welcoming environment.
• Ensures compliance of food product ordering, receiving and inventory control and maintains all standard operating procedures for all aspects of the restaurant’s operation.
• Ensures all department standards are met through the proper interviewing, hiring, and training of team members.
• Develops and implements training programs for all team members. Coordinates all team member training classes and monthly department meetings.
• Inspects and evaluates team members following established standards and policies.
• Conducts formal performance evaluation of direct report subordinates and disciplines as necessary.
• Observes workers engaged in preparing, portioning and garnishing foods to ensure that methods of cooking, garnishing and sizes of portions are as prescribed.
Assists with the preparation of dishes and cooks and carves meat during rush periods.

Sobre ti

Qualifications
• Diploma/Degree in Hotel Management
• Minimum 5 years’ experience as Sous Chef or currently a Chef De Cuisine in an international hotels or restaurants
  • Idioma requerido: Inglés.
