We are looking for an experienced Butcher – Prep Chef to join the team of our fantastic restaurant – Sexy Fish¬, part of Caprice Holdings.

Based on Berkeley Square Sexy Fish has a capacity for up to 200 covers on the ground floor and a stunning private dining space on the lower ground floor. The restaurant is vibrant, glamorous with high energy focusing on the finest quality ingredients to create an Asian inspired menu with a focus on Japan.

Key responsibilities for the Butcher – Prep Chef:
• Organise meat and fish orders according to the menu. Check on a daily basis
• Cut and marinate Striploin steaks, Rib-Eye steaks, Flank Steaks and Skirt steaks one week in advance up to specifications
• Keep exact check on size and weight of the required products
• See that all machines, working utensils, freezers and refrigerators are cleaned and in proper working condition

We are ideally looking for candidates who:
• Are experienced in butchering and preparing fresh cuts of meat in high quality environment
• Have experience in sausages, smoking, curing and preserving meat and fish
• Have a strong focus on correct procedures and stock rotation
• Have a passion for food, working with the highest quality ingredients and developing more junior members of the team
• Experience working within a high quality Asian restaurant or knowledge of Asian ingredients would be an advantage
• Are excellent team players with a positive and enthusiastic attitude
• Are motivated and looking to develop their career
