Position responsible for all the food and beverage operations, which includes all culinary, restaurant, beverage and room service operations. Oversees guest and employee satisfaction, maintaining standards and meeting or exceeding financial goals. Demonstrates knowledge and proficiency of all applicable food and beverage laws and regulations. Develops and implements business plan for food and beverage.




Education and Experience

• High school diploma or GED; 3 years experience in the food and beverage, culinary, or related professional area.


• 2-year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 3 years experience in the food and beverage, culinary, or related professional area.






Restaurant Quality Manager performs the following duties:


     3.1 Have the following knowledge:


- The schedule of group and individual events, time, location, number of people and special requirements;


- Location of all functional hotel rooms, name of rooms, local suppliers, detailed information on restaurant events.


3.2 Ensure that the overall restaurant experience for the guests is at the expected level of a Ritz-Carlton, with a special focus on delivering the Ritz-Carlton breakfast experience;


3.3 Ensure that the food presentation is per the Ritz-Carlton standards, and is maintained. The expected menu selection and suggested display was shared with the outsourced vendor;


3.4 Ensure the restaurant is kept in a clean and defect free manor as expected for BSA;


3.5 Ensure that the hostesses, servers, sommeliers and leadership teams are trained as per the Ritz-Carlton standards and that they are aware of the expectations, escorting the guests, explaining the facilities, breakfast etc., using 3 steps of service, use of guest names and full interaction with the guests;


3.6 Hold monthly training with the outsourced service team to ensure that BSA expectations are shared and that role play trainings are carried out and documented on a monthly basis;


3.7 Ensure good communication between the outsourced Vendor and the Front Desk, to ensure documented training of billing procedure and signed order from their side;


3.8 Highlight any health and safety issues which may arise;


3.9 Plan and set both immediate and long-term goals and objectives;


3.10 Compile and organize agenda information according to hotel standards. Notify staff about all changes, document information;


3.11 Close cooperation with Kitchen to ensure food safety and allergen descriptors are in place and adhere to;


3.14 Take part in the daily morning meetings (“line-up”) to disseminate information about the rules for preparing rooms, tables and serving dishes at different times of the day;


3.15 Meet with participants in conferences and other events to clarify details and correctly understand the requirements of the program;


3.16 To assist staff in the performance of official duties to achieve a high level of guest service and to maintain cleanliness and order;


3.17 Monitor compliance with local, federal and state laws on the use of alcoholic beverages;


3.18 Monitor compliance with local laws of the Ministry of Health;


3.19 Follow the response and feedback from guests to monitor guest satisfaction;


3.20 Track guest complaints and promptly resolve their problems, be attentive and helpful;


3.21 Record all the necessary information in the accounting journal of the room service department;


3.22 Perform all office work and final procedures in accordance with the standards of the department;


3.23 Daily perform the entire list of works in accordance with the standards and requirements of the department;


3.24 Develop and improve the work of staff, monitor the performance of official duties, conduct regular trainings;


3.25 Assist room service staff as needed;


3.26 Attend and participate in meetings as scheduled;


3.27 Help assistant managers in staff counseling and training;


3.28 Assist the EAM of F&B, executive chef and restaurant chef;


3.29 Observe the rules of fire safety.
