The Role of the Junior Sous Chef Pastry
Reporting to the Executive Pastry Chef, you will support the leadership and management of the pastry brigade while helping in its day-to-day operations. You will oversee the preparation of desserts and bakery items, always ensuring consistent quality is delivered in every dish, ensuring recipe cards are followed as well as production, portion and presentation standards.  You will be supervising and completing the mise en place and the set-up of the dessert stations for service, always maintaining a safe and sanitary work environment as per HACCP. You will be involved in the culinary team management functions as well as in all pastry areas of preparation, service and food orders. You will support in managing food costs, preparing and monitoring time schedules, developing and mentoring a passionate pastry team, ensuring all guests receive the highest levels of food excellence consistently.

Our Ideal Junior Sous Chef Pastry will have
At least 3 years of experience as Chef de Partie Pastry, you ideally will hold a qualification from a culinary school along with excellent pastry and bakery knowledge gained in refined dining restaurants and/or in luxury hotels. You should be well familiar with all HACCP rules, with allergens, along with some knowledge of the legal/fire/safety practices pertinent to the role.
It is important to us that you have the highest level of integrity, an eye for detail and a collaborative nature along with the ability to exercise independent judgment. You should be able to operate in a highly busy environment, have a polished presentation and excellent communication skills.

This position is based at the San Domenico Palace in Taormina and the contract is seasonal. The candidate must have a flexible schedule and work also on weekends and holidays. You must possess the legal right to work in Italy. Knowledge of English would represent an advantage.
