Our modern 187 room hotel is situated opposite historic Flinders Street Station and Federation Square and is design driven, industrial-chic and filled with contemporary furnishings and boutique touches inspired by the surrounding laneways.

The Role

The Demi Chef prepares and cooks food in all areas of the kitchen according to standard procedures, recipe cards, photographs and given instructions. This role assists in training team members. He / she participates in product development and in controlling the smooth operation of the kitchen.


  • Prepare food for guests and team members efficiently, economically, and hygienically as per standard recipes and procedures.
  • Work seamlessly with recipes, standards and plating guides.
  • Maintain all HACCP aspects within the hotel operation.
  • Use all equipment, tools and machines appropriately.
  • Contributing to control costs, improving gross profit margins, and other departmental and financial targets
  • Check that the quality of food prepared by team members meet the required standard and make the necessary adjustments.


  • Experience as Demi Chef or Commis Chef in a hotel or individual restaurant with high standards.
  • Relevant qualification in Commercial Cookery.
  • Ability to work independently and in a fast paced environment.
