Joining us during the hotel's pre-opening phase, our Food & Beverage Duty Manager at DoubleTree by Hilton Perth Waterfront will work closely with the senior management team to supervise the operation and team within of our Food and Beverage outlets: restaurant, bar, executive lounge, banqueting and in-room dining. This multifaceted role supports the smooth-running & high performance of the team and the delivery of superior service.


Reporting to the Food & Beverage Operations Manager, key responsibilities of this role include:

  • Lead by example; champion exceptional hospitality and ensure that it is part of all aspects of our operation. 
  • Oversee and get involved in the day-to-day service elements of food & beverage: opening & closing, ordering stock, assisting with rosters, mise en place, preparation & service, upselling, handling cash and maintaining equipment.
  • Assist with team training and development, provide feedback on performance, support and guide team member's to thrive in their roles.
  • Be driven and innovative; inspire the team to achieve targets and continuously look at ways to improve the service offering.
  • Brief all on-shift team members on daily and upcoming happenings, special requests, and any potential issues before they arise.
  • Assist the team in solving any guest issues or complaints, encouraging the use of initiative and departmental empowerment guidelines.
  • Ensure shift team members are trained in and conduct themselves following hotel security, fire regulations and all health and safety practices.
  • Be environmentally aware and look for ways to lessen our environmental impact within food & beverage and the broader hotel.
  • Collaborate with other departments to ensure seamless service delivery.


To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

  • Experience in an equivalent managerial or supervisory role, ideally within a hotel's Food & Beverage environment,
  • OnQ Property Management System, Micros or Agylisis POS experience preferred.
  • Ability to work a rotating roster that includes weekdays, weekends, early starts and late-night shifts.
  • Holds a bachelor degree in hotel management, business, or another related field (desirable).
  • Unrestricted Australian Working Rights.
  • First Aid qualification.
  • Approved Manager & Responsible Service of Alcohol certification.
  • Australian National Police Clearance.
  • A demonstrated history of working in unsupervised.
  • Successful team leadership, interpersonal and communication skills, ideally within a hotel setting.
  • Ability to deliver results under pressure and to time constraints, and
  • Flexibility to respond to a variety of different work situation.
