MAIN PURPOSE OF THE ROLE: You will work closely with, and as part of, our exceptional kitchen brigade and continue to develop the creativity of our award-winning canapé menu. Working with the freshest seasonal produce and within a highly talented and dynamic brigade, you will be responsible for the quality and delivery of all menus and the smooth running of the Canapé section. With the support of your dedicated team, you will be responsible for the development and delivery of Rocket’s industry renowned canapé offering. We were awarded Country Life magazine’s Canapé of the Year award in 2017 and 2018 our canapés are an integral part of our menu. KEY RESPONSIBILITIES: Operational – Planning, production and delivery of Canapés for events and Pocket Rocket – our exclusive canapé delivery service. – Support food production as a valued member of the overall kitchen brigade as requested by the Head Chef, including working on events at prestigious venues as and when required. – Working efficiently and tidily, ensuring the canapé team are implementing best practice and skills in a sustainable manner. Menu development – Assist the Kitchen management team in the design and development of all seasonal event menu’s, contributing exciting ideas. – Ensuring that recipes and luxury standards are adhered to and new dishes are recorded appropriately. Health and safety – Ensuring that all food is prepared hygienically and safely at all times, adhering to strict allergen requirements, in line with food safety legislation and company policy. – Ensuring that all food is covered and dated correctly at all times, as well as stored at correct temperatures.
