- Provides personal coaching and guidance to improve.
- Encourages ideas and suggestions for problem solving, quality improvement from staff.
- Discusses suggestions with team members.
- Ensures a clean, professional appearance according to hotel grooming standards and assists to ensure all staffs are of required standard.
- Ensures proper use and cleaning of equipment in order to prolong the use and prevent damage
- Drives the hygiene and sanitation procedures set by the hotel when handling food and assist to ensure all cooks are of required standard.
- Acquainted and familiar with the use of all electrical and mechanical equipment in the kitchen and observes the safety precautions when handling them and assists to ensure all cooks are of required standard.
- Knowing the delegation of Authority at your level
- Check all set ups and responsible for all aspects of timing during service and ensure all food served is of the highest standard.
- Drives restaurant and outlet quality and profitability.
- Constantly checks the quality of food prepared with to taste and temperature.
- Takes full responsibility of portion control, usage, wastage according to recipe standards.
- Responsible for all stores and fridges, storing of food products and recycling of leftovers.
Requirements:
- Master of specialty cuisine techniques and ingredients
- Culinary Arts Degree
- Culinary Apprenticeship
- Highly advanced knowledge of authentic specialty cuisine
- Motivator and self-starter
- Team worker / builder
- Displays initiative & creativity
- Strong interest to teach & train
- Positive attitude
