As a F&B Manager/ Assistant Director of F&B.we rely on you to:
作为餐饮运营经理,我们希望您承担以下职责:
- Assist the Director of Food & Beverage in ensuring a smooth running, profitable operation in the framework of the Hotel.
- Monitor and ensure smooth operations of the sections appointed (restaurants / banquet / beverage - as applicable) ,especially familiar with the operation and management of All Day Dinning Restaurant.
- Maintain consistency in quality of food / beverage / service /cleanliness of sections appointed.
- Constantly obtain customer feedback during operations to ensure satisfaction.
- Proper and tactful handling of verbal complaints from customers.
- Ensure effective communication within sections appointed and with other divisions.
- Ensure general maintenance of all outlet and follow up on work order forms with engineering department.
- Update the log book for respective section and submit to division head daily.
- Ensure that staff are aware of and applies the procedures concerning hotel fire and life safety / emergency procedures
- Ensures that staff applies the necessary precautions with regards to the SFSMS standards.
- Co-ordinate with the Chef in sections appointed on planning of promotions / menu planning / staff training (as applicable)
- Regular marketing survey to update on new items and technology availability in the market in order to seek improvement of operations.
- To have complete knowledge on the food / beverage / service available in sections appointed.
- Liaise with Stewarding department on quarterly inventory taking / costs / breakage.
- Approves food / beverage / general requisitions / transfer forms in sections appointed and be aware of costs involved.
- Implement appropriate and effective measures to improve control of costs / expenses / labor.
- 协助餐饮总监确保部门平稳运作、赢利。
- 监督并确保指定部门(根据各餐厅/宴会部/酒水的不同情况)的顺利运营,尤其是熟悉全日制餐厅运营和管理。
- 始终如一地保持指定餐厅的食品/酒水/服务/清洁度。
- 在运营中不断地收集客人的反馈意见,以确保令客人喜出望外。
- 正确并且有技巧地处理客人的口头投诉。
- 确保指定部门内部及其与其它大部门之间的有效交流。
- 确保餐饮部的总体维修保养,跟踪工程部的总体维修情况。
- 每日更新各部门的日志,并提交给部门总监。
- 确保员工了解并使用饭店有关消防和生命安全/紧急事件的程序。
- 确保员工对集团食品卫生管理系统标准给予必要的遵守
- 与指定部门的厨师长协作,制定促销/菜单计划/员工培训的方案(根据具体情况)。
- 通过常规市场调查及时更新市新品种和新技术,力求不断完善相关的运营。
- 具备有关指定部门的食品/酒水/服务方面的所有知识。
- 与管事部联系有关季度库存的收货/成本/损坏的情况。
- 批准指定餐厅的食品/酒水/总体申请/调动表,了解相关成本。
- 实施正确而有效的衡量措施,以改进对成本 / 开支/劳动力的控制。
