The Executive Chef at Fairmont Dallas will oversee all aspects of the Culinary division and Stewarding. Interpersonal development, creativity, passion and financial acumen are must haves to oversee these growing departments.

What you will be doing:

  • Ensure that all kitchen and stewarding operations are compliant with legislated food safety regulations
  • Responsible for attaining food cost of sales goals by overseeing ordering, inventories and food controls for the entire division
  • Work with food stores to ensure proper delivery(and quality) of all food items
  • Prepare the annual planning of the F&B budget as it pertains to the kitchen (food cost, productivities), as well as implementation and regular monitoring of the budget/forecasts
  • Work with Sous Chefs and Chief Steward to ensure the weekly productivity forecast is completed accurately and in a timely fashion
  • Source local ingredients for seasonal food items
  • Ensure that all menus are created using guest feedback, industry trends, competitive intelligence, seasonal offerings and all FHR service standards
  • Work together with the F&B Manager on all areas pertaining to menus and food service 
  • Develop menus for all food operations. Ensure all menu items are costed accurately
  • Ensure that work on the kitchen action plans for Employee engagement and Guest satisfaction remain the focus for the Culinary and Stewarding teams
  • Play an active role in the F&B operation committee meetings
  • Responsible for the running of the Employee Dining Room, including cleanliness, operation and food production Qualifications
  • Liaise with all departments to ensure that there is clear communication and understanding and positive relationships between the departments and the kitchen (Events, Accounting, HR, Engineering, etc.)
  • Ensure heart of house is clean and well maintained-maintain effective preventative maintenance program for all kitchens
  • Ensure high level of departmental morale through coaching & communication and leading by example in forming strong relationships
  • Take a constructive approach to achieving departmental goals with regards to the Planner scores, financial targets and health and safety & engagement
  • Foster a positive approach towards Health and Safety with all staff and maintain a low frequency of accidents
  • Cooperate in all respects especially with reference to scheduling and the sharing of staff during busy periods
  • Communicate guest satisfaction and concerns that arise in respect to food product
  • Foster positive interdepartmental relationships within the hotel
  • Ensure that equipment needs are adequately maintained and inventories kept
  • Actively participate in the recruitment of team members
  • Assist with administrative duties such payroll, schedule, month-end reporting and forecasting
  • Other duties as assigned

 

Your experience and skills include:

  • 5-6 years’ experience in multi-outlet kitchens with a strong general operational knowledge and a minimum of 2 - 3 years in a senior Culinary leadership role
  • Self-confident, proactive, and able to prioritize and make effective decisions
  • Exceptional communication skills, passionate, strategic and innovative
  • Able to develop strong work relationships with both Guests and Colleagues alike
  • Advanced knowledge of the principles and practices within the Food & Beverage/Hospitality profession
  • Diploma/Degree in Culinary Arts or related discipline an asset
  • Computer literacy a must, with a strong knowledge of Word, Excel, Word, Outlook and PowerPoint
  • Fluency in English (written and verbal) required and other language such as Spanish (an asset)
  • Very comfortable working with different applications and systems

 

Physical abilities:

  • Exert physical effort in transporting (40 pounds)
  • Endure various physical movements throughout the work areas
  • Reach 1-2 feet
  • Remain in stationary position (standing) throughout work shift
  • Walking, bending, pushing, pulling, kneeling, use of ramps and stairs

 

Visa Requirements: Must be legally eligible to work in the United States. The hotel is unable to assist candidates in obtaining work authorization documents.
