Our Sales team are dedicated to developing opportunities and delivering quality – both in the representation of our brands and delivering the best service to our customers.

Role:

This role will look after the Pastry Department (all sweet products/suppliers) within Classic Fine Foods UK.

As Head of Pastry you will lead a team of experienced Account and Brand Managers who will be charged with growing existing sales, strengthen relationships and constantly improving our service. Managing a high-performing sales team, you will be challenged with early autonomy in a fast-paced environment. An essential part of this role will be supplier management, ensuring that we work in alignment with our pastry partners. Culturally you will have a hunger to succeed, entrepreneurial flair and a proven commercial acumen.

The Head of Pastry reports to the Sales Director.

• Management of all Pastry suppliers, including Valrhona, Capfruit, Bridor, Eurovanille, Sosa, Louis Francois, Montebianco, PCB and many more premium pastry brands
• Constructing a commercial strategy, in line with our partners, ensuring growth, GP protection and service
• Ensuring that the commercial strategy will hit annual supplier targets
• Setting up commercial tools alongside the Marketing Department and Sales Director
• Monthly reporting on sales performance against set budget
• Organising all supplier visits, meetings and events
• A key player in TheTasteLab team and activities, adding creativity and ensuring that marketing actions and bookings are at target levels
• Ensuring that activities within TheTasteLab are in line with a commercial strategy and that all results are tracked
• Controlling new product development process / route to market, sharing market insights – working closely with the Purchasing team for all sourcing
• Building and strengthening commercial relationships within existing customer groups
• Customer management of Key Pastry Accounts
• Motivating the Pastry team to achieve growth in sales within existing customers or groups
• Complete sales operational requirements by scheduling and assigning employees; following up on work results
• Set clear and defined targets/strategy for each member of the team
• Handling all aspects of recruitment, selection and performance management
• Continual training and development implemented for the team
• Identifying key areas for improvement in the sales or operations process
• Leading sales meetings, along with the Sales Director, Head of Account Management, New Business Development Manager and Retail Sales Manager
• Representation of the company at key business events and using them to generate new business leads
• Establishes and adjusts selling prices by monitoring costs, competition, and supply and demand
• Keeping a close eye on competition and general market activities – reporting to senior management
• Supporting key brand initiatives set by the board
• Member of the CFF group sales development and group strategy
• Inputting yearly team budgets and expenses proposals

• Strong interest and excellent technical knowledge from experience within the Pasty industry
• Vision and strong commercial acumen
• New Produce Development and Route to Market experience
• Prior experience of successfully managing a sales team within the food industry
• Proven track record of achieving targets and driving sales growth in a business
• Strengths in reporting, numeracy and budgeting
• Strong leadership skills and an ability to inspire, drive and enthuse
• Excellent communication skills, particularly developed negotiation skills
• Able to build strong relationships, both externally and internally
• Demonstrates perseverance and resilience in the pursuit of goals
• Passion for high quality produce and cooking
