The hotel
The Dixon, a new boutique style hotel part of Autograph Collection Hotels opened its doors in December 2018. Taking centre stage in the Tower Bridge neighbourhood on Tooley Street, The Dixon is set to be a new cultural hub for the capital’s centre of artistic activity.
Named after John Dixon Butler – the architect who originally constructed the building in 1905 as a Magistrates’ Court and police station – the hotel takes inspiration from the area’s vibrant cultural heritage, while also capturing its new wave of creative cool.
The 193 rooms redefine the traditional boutique hotel by seamlessly incorporating the local neighbourhood’s culture through an artful mix of heritage design. Think simple brickwork, tall windows and modern furniture from British designers that will sit alongside more classic pieces, whilst curated artworks from local artists will hang on the walls.
The restaurant
Subtly referencing the building’s purpose as a Magistrates Court, Provisioners restaurant, café and bar serves as a neighbourhood oasis that will welcome not only hotel guests but also the local trade.
Provisioners is a place where you can eat, drink, relax and let the day pass you by; it’s a place where guests can be satisfied, whatever their need and staff make every effort to offer warm, individual and bespoke service.
Coffee is the Mark of Craft at The Dixon – it is integral to all elements of the hotel experience and touches all guests, so is placed at a high level of importance in the restaurants and café’s operations. Upholding high standards in this department is an imperative.
The café sells grab-and-go style food and drink, the restaurant serves an accessible all-day European menu and the hotel bar serves world class classic cocktails.
The role
The duty of the Waiter/Waitress is to act as a section leader overseeing the smooth running of her/his station while providing an excellent overall dining experience for our guests. The Waiter’s/Waitress’ responsibilities include greeting and serving customers, providing detailed information on menus, multi-tasking various front-of-the-house duties and collecting payments. The right candidate uplifts the dining experience for guests by anticipating and exceeding their needs and expectations in a positive, friendly and calm manner while maintaining a clean and safe working environment at all times.

People
• Run a section in the restaurant efficiently through effective co-ordination with the team and impeccable organisation. Work seamlessly with the restaurant team.
• Recognise your team are as important as your guests, regularly offering support and helping out with key tasks as required.
Guest
• Love our guests by anticipating their needs, growing loyalty and maintaining established relationships.
• Deliver impeccable steps of service from a warm welcome to a genuine goodbye.
• Have a rich knowledge of our food and beverage offer to inform and engage with guests.
• Swiftly address guest concerns during service, resolve immediately and escalate to the General Manager as appropriate.
Operations
• Know our policies, procedures and specifications to ensure full compliance within your section.
• Understand and follow all H&S guidelines and keep a clean, safe and legal restaurant at all times.
• Maintain an immaculately presented section, and report all maintenance issues to your manager.
Communication
• Attend and participate in weekly restaurant team meetings to ensure that you are aware of all key activities and innovations.
• Attend and support the delivery of energising, informative shift briefings before service so you understand menu changes, special guests and bookings within your section.
• Proactively communicate between the FoH and BoH teams on duty to deliver an incredible experience throughout service.
Business
• Know what your daily sales and profit targets are.
• Help to drive sales by upselling where appropriate, role modelling to others and coaching if you are supervising a team.
• Know your local area and competitors and be aware of their latest offers / promotions.
• Understand how the success of the restaurant contributes to the bigger picture, make suggestions and support the implementation of new initiatives as advised.
